  • 1 TBSP BAKING POWDER
  • PINCH OF SALT
  • 125 GRM UNSALTED BUTTER
  • 125 GRM SUGER
  • 2 EGGS
  • 1 TSP OF VANILLA ESSENCE/ GRATED ZEST OF ONE LEMON/ ONE ORANGE
  • FOR THE TOPPING:
  • ICING SUGER OR SUGER GLAZE MADE WITH 100 GRM ICING SUGER, 5-6 TBSP OF WATER, LEMON OR ORANGE JUICE

Recipe Method

  1. 1. GREASE THE TIN AND LINE THE BASE WITH PAPER. GREASE THE PAPER AND COAT IT WITH FLOUR AND SUGER. HEAT THE OVENTO 350 F/ 175 C/ GAS MARK 4. SIFT THE FLOUR WITH THE BAKING POWDER AND SALT.
  2. 2. CREAM THE BUTTER AND SUGER. BEAT THE EGGS ONE BY ONE, BEAT THOROUGHLY AFTER EACH ADDITION. BEAT IN THE FLAVOURING. FOLD
  3. THE FLOUR INTO THE BATTER IN THREE BATCHES, THEN SPOON THE BATTER INTO THE PREPARED TIN.
  4. 3.  BAKE THE CAKE IN THE PREHEATED OVEN FOR 40-50 MINTS OR UNTILL THE CAKE TESTS DONE. TRANSFER THE CAKE TO A RACK TO COOL.
  5. 4.  SHORTLY BEFORE SERVING, SPRINKLE THE CAKE WITH ICING SUGER OR TOP IT WITH SUGER GLAZE.
