This Aalu Methi recipe has a lot of flavor and bitterness of methi (fenugreek) leaves combined with the earthy flavor and taste of potatoes.

Ingredients:

  • Oil 4 tbsp
  • Cumin seeds 1 tsp
  • Dried red chilies 3
  • Chopped green chilies 2
  • Potatoes (peeled & cubed) 2
  • Chopped fenugreek leaves 1 bunch
  • Turmeric 1 tsp
  • Chili powder ½ tsp
  • Salt to taste

 

METHOD:
Heat oil in a pan then add cumin seeds and dried red chilies. Now add potatoes and let it cook until it gets tender. Then add fenugreek leaves, chili powder, salt, green chilies, turmeric and cook on high heat so that all water gets dried then serve.

Ingredients for kofta:

  • Roasted chickpeas 2tbsp
  • All spice powder 1 tsp
  • Onion (chopped) 2
  • Coriander (chopped) 1 bunch
  • Garlic ½ tsp
  • Bread 2 slices
  • Green Chilies (chopped) 3
  • Beef mince 500gm
  • Salt to taste

For Gravy:

  • Spinach (chopped & blanched) 1 kg
  • Fenugreek leaves (chopped) 1 bunch
  • Turmeric 1tsp
  • Onions 2
  • All spice powder 1tsp
  • Oil ½ cup
  • Dill (chopped) 1 bunch
  • Red chilies 1tbsp
  • Ginger garlic paste 1tbsp
  • Butter 1tbsp
  • Salt to taste
  • Green Chilies 4
  • Tomatoes 4
  • Cumin seeds 1tsp

 

Method:
Mix all ingredients of koftay then make balls and fry them in oil. Heat oil add onion and cook till it gets golden. Then add cumin seeds, ginger garlic, salt, red chilies, turmeric, tomatoes and cook well. Now add spinach, fenugreek leaves, dill and cook on high heat. When oil comes up then add koftay, all spice powder, green chilies and let it simmer. Serve with butter on top.

Ingredients:

  • Yogurt 1 cup
  • Grated cucumber 1 cup
  • Garlic (minced) 1 clove
  • Mint leaves 4 springs
  • Salt 1 tsp
  • Golden raisins 1 tbsp
  • Grounded black pepper to taste

 

Method:
Whisk the yogurt until smooth. Add the rest of the ingredients plus a little freshly ground black pepper.Stir, chill, and serve.
