INGREDIENTS:

FOR DOUGH:

  • Flour 2 cup
  • Sugar 1 tsp
  • Baking powder 1 tsp
  • Baking soda ¼ tsp
  • Salt to taste
  • Curd ¼ cup
  • Oil 2 tsp
  • Luke water as required

FOR POTATO STUFFING:

  • Potato, boiled and peeled 2 larges
  • Green chili chopped 1
  • Crushed red chili ½ tsp
  • Garam masala powder ¼ tsp
  • Amchur powder ¼ tsp
  • Carom seeds ¼ tsp
  • Coriander leaves chopped 2 tbsp
  • Salt to taste

OTHER INGREDIENTS:

  • Black sesame seeds 2 tsp
  • Coriander chopped 3 tbsp
  • Butter 2 tbsp
  • Crushed coriander seeds 1 tsp
  • Crushed anardana 1 tbsp
  • Chili powder 1 tsp

 

 

Method :
Firstly, knead the dough for 10 minutes with ingredients listed for dough. Cover with a moist cloth and rest for 2 hours in warm place. Mix the ingredients listed for stuffing. After 2 hours, pinch a ball sized dough. And roll to 5 inch circular disk and place aloo stuffing in the centre. Take the edge and start pleating bringing to centre. Sprinkle some coriander seeds, crushed anar dana, chili powder, sesame seeds and coriander leaves. Gently roll to round shape using rolling pin. Brush with oil over kulcha. Further more, slowly flip over and put it on hot tawa and press gently. After a minute, flip the tawa upside down and cook kulcha directly on flame till they turn golden browner bake in oven for 8 to 10 minutes. Finally, serve aloo kulcha hot.

INGREDIENTS:

  • Onion grated 1/2 cup
  • Tomato puree 1 cup
  • Oil 1/2 cup
  • Ginger-garlic minced 1tbsp
  • Green chili chopped 1tbp
  • Green chili whole 4-5
  • Fenugreek leaves 1tsp
  • Nutmeg powder 1/2 tsp
  • Ground Kashmiri red chili 1tsp
  • Turmeric 1/2tsp
  • Coriander powder 1tbsp
  • Mango powder 1tsp
  • Ground black pepper 1tsp
  • Yogurt 1/2 cup
  • Chickpeas boiled 2cup
  • Chickpeas boiled mashed 1/2
  • Egg boiled 4
  • Garam masala 1tsp
  • Coriander leaves for garnishing

 

Method:
Add cooking oil in a pan and let it heat then add grated onion and tomato puree. Stir until water dies up. Add minced ginger-garlic, chopped green chilies, Fry for 2 minutes. Add Kashmiri red chili powder, turmeric powder, coriander powder, dried mango powder, and black pepper powder. Cook until oil separates from the masala add plain yogurt and then mix all the ingredients well.
Add boiled and mashed both chickpeas and then mix all the ingredients well.
Add 1 cup of leftover chickpeas cooking water and then cook for 5 minutes. Add 4 boiled eggs. Whole green chilies, dried fenugreek leaves and jaiphal javitri and garam masala. Mix all the ingredients well. Add coriander greens and serve.
