Ingredients:

  • Beef ½ kg
  • Yogurt ½ cup
  • Ginger garlic paste 1 tbsp
  • Turmeric powder 1 tsp
  • Oil as required
  • Coriander (whole) 1 tsp
  • Lemon juice 2
  • Salt to taste
  • Red chili flakes 1 tsp
  • Cumin (crushed) 1 tsp
  • Onions 2
  • Coriander, green chilies 2 tsp
  • Meat tenderizer 1 tbsp

 

Method:
In a beef add yogurt, salt, red chili flakes, turmeric powder, cumin, ginger garlic paste, crushed coriander, meat tenderizer, coriander and green chilies. Marinate for about 1 hour. Then in sauce pan heat oil add onions and fry well. Now add marinated beef and cook on low flame. Once the beef gets tender, place it in a serving dish and add lemon juice. Serve hot.

Ingredients:

  • Undercut cubes ½ kg
  • Chili powder 1 tsp heaped
  • Ginger garlic 1 tsp heaped
  • Black cumin ½ tsp
  • White cumin ½ tsp
  • Oil 2 tbsp
  • Tomato puree 2 tbsp heaped
  • Salt 1 tsp
  • Turmeric 1 pinch
  • Eggs 2
  • Bread crumbs as per choice
  • Wooden skewers as per choice
  • Water as per choice
  • Water 2 tbsp

METHOD

• Grind together chili powder, turmeric, both the cumin and ginger garlic.
• Heat oil, fry grinded masala, add undercut, cover and cook with half cup of water till meat is tender.
• Put beef pieces on wooden skewers.
• Dip these in beaten egg, then in bread crumbs and deep fry.
• Serve with any chutney.

  • Chicken 1 kg
  • Yogurt ½ kg
  • Onion 2 cups
  • Oil ½ cup
  • Ginger garlic 1 tbsp
  • Salt 1 ½ tsp
  • Coriander leaves ½ bunch
  • Ginger garlic ½ tsp
  • Green chilies 8 grinded
  • Oil ½ cup
  • Poppy seeds 2 tbsp
  • Grinded almonds 2 tbsp
  • Coconut milk powder ¾ cup
  • Nutmeg ¼ tsp
  • Mace ¼ tsp
  • Saffron ¼ tsp
  • Allspice powder ¼ tsp
  • Water ½ cup
  • Curry leaves as per choice
  • Water 1 cup

Ingredients for Temper:

  • Oil ¼ cup
  • Curry leaves handful

 

METHOD:

• Marinate chicken with ½ cup yogurt, 1 tbsp grinded green masala, half quantity of ginger garlic for 30 minutes.
• Then pour this mixture in a pan and cook till half done.
• Fry onion in half cup oil till half done, remove and blend with remaining curd, poppy seeds and almonds.
• Add this mixture to the oil and fry well, add in remaining hara masala, coconut milk powder dissolved in 1 cup water.
• Cover and leave it on dum for 15-20 mins.
• Lastly add nutmeg, mace, and saffron and allspice powder and give temper of curry leaves.
• Remove and serve with sheermaal.

Ingredients

 

  • Boiled rice                             ½ kg
  • Sugar                                                 ½ kg
  • Water                                    1 cup
  • tutti frutti                             1 cup
  • Whole dried milk                250 gm
  • Yellow Food Color              1 pinch
  • Red Color                              1 pinch
  • Green Color                         1 pinch
  • Chum Chum sweets           250 gm
  • Screw pine essence           few drops
  • Sterling Silver Leaves        for garnishing
  • Cardamom Powder           ½ tsp
  • Clarified butter                   ½ cup
  • Chopped almonds              for garnishing
  • Pistachios                             for garnishing
  • Dry Fruits                             ½ cup

 

 

Method:

  • In a pan, heat clarified butter, sugar, cardamom powder, screwpine essence, water and cook well.
  • When Syrup is ready add boiled rice and mix, let it simmer for 45 minutes.
  • Then add red and green color.
  • Then mix the rice and dish it out.
  • Add whole dried milk, tutti frutti, chum chum sweets on top.
  • Garnish with dry fruits and silver leaves.

Ingredients for Chicken Tikka:

  • Chicken 1
  • Chili powder 2 tsp
  • Sambal oleak 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Roasted n crushed cumin 2 tsp
  • Salt 1 ½ tsp
  • Lemon juice ¼ cup
  • Yogurt 4 tbsp
  • Orange color a pinch
  • Chat masala 1 tbsp
  • Oil ¼ cup
  • Coal 1 piece
  • Chat masala 1 tsp

Ingredients for Pulao:

  • Rice ½ kg
  • Oil ½ cup
  • Chopped onion 1 cup
  • Black cumin ½ tsp
  • Green chilies 6 grinded
  • Mixed whole spices 1 tbsp
  • Bay leaf 1
  • Ginger garlic 1 tsp
  • Star anise 1 piece
  • Cinnamon stick 1
  • Black Pepper 4-5
  • Clove 3-4
  • Small cardamom 2-3
  • All spices powder ½ tsp
  • Salt 1 ½ tsp
  • Chopped green chilies 3
  • Sambal oleak 1 tbsp
  • Sweet chili sauce 1 tbsp
  • Stock cube 1
  • Green chilies 3

METHOD FOR TIKKA:

• Marinate chicken with all the given ingredients, leave it for 2 hours.
• Cook in a pan covered until done, give dum of coal and keep aside.

METHOD FOR PULAO:

• Heat oil in a wok, add chopped onion, and fry till light golden.
• Then add whole spices, ginger garlic, black cumin, green chilies grinded, bay leaf, stock cube, salt and water, add soaked rice, cover and cook until done.
• Leave it on dum, add chicken on top and leave it on dum for 10 minutes.
• Mix the rice; then serve it with tikka pieces and raita.
