Ingredients:
Flour 1 cup
Salt ½ tsp
Yeast 10 gm
Sugar ½ tsp
Ghee 1-1/4 tsp
Egg 1
Sesame seeds as required
Onion seeds as required
Poppy seeds as required
Oil for greasing

Method:
Place yeast and sugar in a cup. Pour lukewarm water over this and cover. Let it rise for five to seven minutes. Sift flour and salt together. Place in a large mixing bowl. Make a well in the centre of the flour and place yeast liquid into the well in the flour and mix. Rub in softened ghee and knead lightly for about ten minutes to form a smooth but fairly firm dough, using extra water if needed. Cover with a moist cloth and rest until doubled in size. Knock back the dough, allow it to rest further for ten minutes and then roll it into a rectangle about one fourth inch thick on a lightly floured work surface. Preheat oven to 230°C. Cut the rolled dough into one centimetre by eight centimetre strips. Take individual strips and roll into ten to twelve centimetre long sticks. Place them on a greased baking tray. If using egg, beat it with a fork lightly. Brush bread sticks with egg and sprinkle with sesame seeds or onion seeds or poppy seeds. Bake in the preheated oven for fifteen minutes and then reduce temperature to 190°C for another ten minutes. Remove, cool and store in air-tight container.

Yeast is a living organism and if hot milk is added to dissolve it, it gets killed and no raising action can then happen. It is best to use lukewarm milk! Note: To knock back dough you simply punch the risen dough down with the back of your hand. The rise will collapse, flattening the large spaces previously filled with the aerating gases that will escape. You can then shape the dough into whatever shape you wish to bake the bread in and let it rise again. Second time round the dough will rise quicker than the first time and will produce a well-proved dough, resulting in loaves of even texture and a sweet mature flavour.
