Ingredients:

  • Chicken boneless ½ kg (cut into strips)
  • Butter 4 ounce
  • Lemon juice 4 tbsp
  • Crushed red pepper 2 tsp heaped
  • Karahi masala 2 tsp
  • Salt ½ tsp
  • Capsicum 1 (cut into julienne)
  • Papar (deep fried) 4 (for serving)

 

METHOD:

Heat 1 cup water in karahi with 4 ounce butter, add in chicken with salt, crushed red pepper, cook till water dries and water comes on top, add lemon juice, karahi masala, capsicum, fry for 2 mins and remove, serve over fried papar.

Ingredients:

  • Cauliflower (boiled) 1 small 250 gm
  • Peas (boiled) ½ cup
  • Capsicum 1
  • Oil ¼ + ½ cup for frying
  • Onion (chopped) 1
  • Tomatoes (chopped) 2
  • Cumin seeds 1 tsp
  • Ginger garlic 1 tsp
  • Turmeric ¼ tsp
  • Cumin (roasted & crushed) 1tsp
  • Chili powder 1 tsp
  • Salt 1 tsp
  • Yogurt ½ cup
  • Chili sauce 1 tsp
  • Coriander leaves (chopped) 3 tbsp

METHOD:

Heat oil, add cumin seeds with chopped onion, fry for 2 mins, add tomatoes, fry for 5 mins, add ginger garlic paste, dry spices, blanched cauliflower, boiled peas and finely chopped capsicum, do katakat with 2 special spoons then add yogurt, chili sauce, cover and cook till done. Lastly add chopped coriander leaves, do katakat till done, serve hot.

Ingredients for Cupcakes:

  • Flour 1 ½ cup
  • Baking powder 1 tsp
  • Salt ¼ tsp
  • Milk ½ cup
  • Vanilla essence 1 tsp
  • Lemon juice 2 tbsp
  • Butter 4 ounce
  • Sugar 1 cup
  • Egg 1
  • Egg whites 2

Ingredients for Frosting:

  • Butter 6 ounces firm but not chilled
  • Cream cheese 2 tbsp
  • Icing sugar 2 cups
  • Vanilla essence ½ tsp
  • Lemon juice 1 tbsp
  • Milk ½ to 1 tsp (if required)

 

METHOD:

Pre-heat oven to 180 D, line muffin tray with liners, sieve together flour, baking powder, add in salt. In a small bowl mix together milk, vanilla and lemon juice. Beat butter until creamy, gradually add sugar, reduce heat and add egg and egg whites until just blended with mixture on low, add half the flour mixture, add milk mixture, slowly fold in the remaining flour scraping down sides, divide batter evenly in muffin cups, bake on 180 D for 20 mins.

 

METHOD FOR FROSTING:

Beat butter and salt on medium until creamy, reduce speed, slowly add milk, cream cheese and sieved icing sugar, beat until combined, add vanilla and lemon juice, do not over beat. Pipe cupcakes with frosting.
