  • Boneless chicken 500 gm
  • Lemon juice 1 tbsp
  • Salt to taste

For The Marination:

  • Cashew paste 2 tsp
  • Green cardamom powder ¼ tsp
  • Garlic ginger paste 1 tbsp
  • Crushed green chilies 2 tsp
  • Corn flour 1 tbsp
  • Cumin powder 1 tsp
  • All spice powder 2 tsp
  • Salt to taste
  • Yogurt ¼ cup
  • Black paper 1tsp
  • Mozzarella cheese (shredded) ¼ cup
  • Dried fenugreek leaves 1 tbsp
  • Fresh coriander (chopped) 1 tbsp
  • Cream 3 tbsp
  • Oil 2 tbsp

Clean, rinse, and cut the chicken into cubes. In a large bowl mix chicken with lemon juice and salt. Mix it well. Let it marinade for 30 minutes in the refrigerator.
Meanwhile, let’s assemble all the ingredients in a large bowl.
Mix it well. Now add chicken. Rub this marinade onto the chicken. Marinade chicken in this mix for 5-6 hours or overnight. Remove chicken from the fridge and thread the pieces onto the skewers. Then cook for 25-30 minutes turning them once in between until cooked through. Generously brush with oil. Transfer the skewers to a platter and serve hot.

  • All-purpose flour 2 1/2 cups
  • Sugar 2 tsp
  • Salt 1 tsp
  • Baking powder 1 tsp
  • Oil 2 tsp
  • Milk 1/2 cup
  • Butter 2 tabs
  • Fresh coriander for seasoning

Combine all dry ingredients, and whisk together. Create a well in the middle of the dry ingredients, and add the oil and milk. Mix everything together until it forms a ball. Turn out on the counter and knead until very smooth and elastic — at least 5 minutes. Let the dough rest for 10 minutes. Heat a skillet over medium-high heat. Roll one piece of dough and cook the naan until parts are blackening, on each side. When they are done, you can brush them with butter. Lastly add fresh coriander and serve hot.

  • garlic (roughly chopped, toasted) 2 cloves
  • mint leaves 1 cup
  • Black salt 1/4 tsp
  • ginger (grated) 1 tsp
  • salt 1/4 tsp
  • yogurt 1/2 cup
  • water 3 tbsp

Add all other ingredients except the water to the food processor with the garlic. Blend on high for 20-30 seconds to combine the ingredients. Drizzle in water, 1 tablespoon at a time until a sauce-like consistency is reached and herbs are well chopped. Place in a small bowl for serving.
