Coffee Meringues Recipe | Food Diaries | Chef Zarnak Sidhwa

These light and airy cookies are the perfect snacks for all you coffee lovers. They give a taste of sweetened coffee in every bite.

Ingredients:

  • Sugar ¾ cup
  • Corn flour 2 tsp
  • Coffee powder 2 tsp
  • Egg whites 4
  • Vanilla essence ¾ tsp
  • Salt 1/8 tsp
  • Chocolate ice cream 4 scoops
  • Chopped strawberries to decorate

Method:
Combine sugar, corn flour, salt and coffee powder. Beat egg whites in large mixer bowl until soft peaks form. Slowly add sugar mixture, one tablespoon at a time, continue to beat until glossy and stiff peaks have formed also add vanilla essence. Spoon about ¼ cup mixture into mounds on prepared baking sheets. With back of spoon, create indent in the middle to hold the ice cream. Bake at 160 degrees C for 1 hour. Turn off oven, do not open the door, keep meringues in oven to dry out and cool for 1 hour. Remove from oven; cool completely. To serve, place meringues on dessert plates; top with a scoop of the chocolate ice cream and chopped strawberries.
