Ingredients:

  • Mutton (mix boti) ½ kg
  • Ginger garlic paste 1 tbsp
  • Almonds 5
  • Whole all spices 1tbsp
  • Cayenne pepper powder 2
  • Sesame seeds 1 ½ tbsp
  • Poppy seeds 1 tsp
  • Bay leaves 2-3
  • Clarified butter 1/2 cup
  • Tomatoes (grinded) 2 medium
  • Karahi gosht masala 3 tbsp
  • Red chili powder 1 tbsp
  • Turmeric powder ¼ tsp
  • Green coriander (chopped) for garnish

 

Method:
In frying pan, add nuts, whole all spice, cayenne pepper, sesame seeds, poppy seeds, bay leaves and roast until fragrant. Let them cool down. In spice mixer, add roasted spices and grind well. In pot, add clarified butter, onion and fry until golden brown. Add mutton and mix well until changes color. Add ginger garlic paste and cook for 2-3 minutes. Add tomatoes grinded and mix well. Add karahi gosht masala, red chili powder, turmeric powder and salt and cook for 5 minutes. Add nut paste along with some water. Cover and cook on low flame for 8-10 minutes. Add fresh coriander and serve.

Ingredients For Stuffing:

  • Radish (grated) 2 cups
  • Salt ½ tsp
  • Green chili (finely chopped) 1
  • Red chili powder ½ tsp
  • Turmeric powder ¼ tsp
  • Coriander leaves (finely chopped) few
  • Coriander powder ½ tsp
  • Chaat masala 1 tsp

For The Dough:

  • Whole wheat flour 1 cup
  • Salt to taste
  • Clarified butter 1 tsp
  • Water as required (for kneading)
  • Clarified butter or oil as required

 

Method:
Firstly, take 2 cups of grated radish in a strainer. Mix salt and rest for 20 minutes.
Squeeze the radish juice completely. Then add chilli, chilli powder, turmeric powder, coriander powder, chaat masala and coriander leaves. Mix well making sure to blend spices well with radish. In a large mixing bowl, take 1 cup of wheat flour. Also add required salt to taste. Now add water in batches and knead the dough. Finally, cover with moist cloth and rest for at least 20 minutes. Now make parathas with radish stuffing and then fry them in ghee serve hot.

  • Peanuts 2 tbsp
  • Salt to taste
  • Tomatoes (chopped) 2
  • Tamarind 1tbsp
  • Red chilies (whole) 4
  • Onions 3
  • Jaggery 1 tsp
  • Oil as required
  • Salt to taste

 

Method:
Heat oil in a pan, add red chilies, onion and sauté it till the onions are golden in color.
Add salt, tamarind, tomatoes, peanuts, cook for some time then add jaggery now make a paste in food processor and again cook for 2-3 minutes and serve.
