Ingredients:

  • Chicken legs 1 kg give cuts
  • Ginger garlic 1 tbsp
  • Yogurt 1 ½ cup
  • Chili powder 1 tbsp
  • Turmeric ½ tsp
  • Salt 2 tsp
  • Oil ¾ cup
  • Brown onion 1 cup
  • Onions 2 sliced
  • Coriander leaves ½ cup
  • Mint leaves ¼ cup
  • Green chilies 4 slit
  • Cloves 4
  • Cinnamon 1 stick
  • black cardamoms 2
  • Black pepper 12
  • star anise 1
  • Cumin seeds 1 tsp
  • Boiled rice 750 gm
  • Ghee ½ cup
  • Water ¼ cup
  • Food color pinch

Method:

Marinate chicken legs with ginger garlic paste, yogurt, chili powder, turmeric, salt for 30 mins, heat oil, fry sliced onion till very light golden, add coriander leaves, green chilies, mint leaves, whole spices and the marinated chicken, cover and cook for 20 mins on low flame, then add in brown onion, some more coriander leaves, mint leaves, top with boiled rice, ghee, water, spread with color, cover and cook for 10 mins on fast flame, lower flame and cook for another 15 mins, mix and serve.

Ingredients:

  • Boneless breast ½ kg
  • Lemon juice 2 tbsp
  • Ginger garlic 1 tbsp
  • Crushed black pepper 1 tsp
  • Chili powder 1 ½ tsp
  • Salt 1 tsp
  • Allspice 1 tsp
  • Chat masala 1 tsp
  • Hung curd ½ cup
  • Grated cheese ½ cup
  • Butter 1 tbsp
  • Black salt ½ tsp
  • Dried fenugree 1 tsp
  • Roasted gram flour 3 tbsp
  • Oil ¼ cup
  • Roasted cumin 1 tsp
  • Green chutney as required

Method:

Marinate chicken cubes with all the above ingredients for 2 hours, put on skewers, bake on 180 d for 30 mins, give dum of coal, serve with green chutney

Ingredients:

  • Butter 250 gm softened
  • Vanilla 2 tsp
  • Almonds essence ¼ tsp
  • Caster sugar ½ cup
  • Corn flour ½ cup
  • Desiccated coconut handful
  • Crushed walnuts or almonds ½ cup
  • Self-raising flour 1 ½ cup
  • Milk as required

 

Method:

Beat butter, vanilla essence, almond essence and icing sugar, corn flour, beat well, add desiccated coconut handful, crushed walnuts or almonds, mix well, gradually add in self raising flour, mix well together into a soft dough, roll into small balls. In a small bowl mix milk with few drops of vanilla essence, keep aside. In another bowl mix crushed almonds, fine sugar and keep aside, now dip top of each biscuit ball in the milk and then sprinkle the above crushed almond mixture over it making biscuits into balls, bake on 180 d for 15-20 mins, when cool, remove, you can decorate them with little melted chocolate.
