Egg and Vegetable Rice are a must have! You can prepare these in less than 15 minutes and achieve the perfect taste at the ease of your home.

Ingredients:

  • Boiled rice                                         2 cups
  • Soy sauce                                          2 tbsp
  • Oil                                                     4 tbsp
  • White pepper                                     1 tbsp
  • Minced garlic cloves                          2
  • Diced onion                                       1
  • Grated carrots                                    2
  • Seet corn                                           ½ cup
  • Peas                                                  ½ cup
  • Eggs                                                  2-3
  • Sliced green onions                            2
  • Salt                                                   as per taste
  • Oil                                                     for pan frying
  • Fried eggs                                          2-3

 

 

Method:

  • Heat oil in a large wok over medium high heat.
  • Add garlic and onion to the wok, and cook, stirring often, until onions appear to be translucent.
  • Stir in carrots, corn and peas, and cook, stirring constantly, until vegetables are tender, for about 3-4 minutes.
  • Stir in rice, green onions and soy sauce. Cook, stirring constantly until heated through.
  • Add eggs and cook about 2 minutes.
  • Serve it hot and fresh!
