Egg Fried Rice Recipe | Food Diaries | Zarnak Sidhwa | Chinese Food

Egg Fried Rice is always a good idea. You can make these with Chinese and Thai gravies or have them just as it is.

Ingredients:

  • Egg 1
  • sesame oil 2 tsp
  • oil 2 tbsp
  • Leftover cooked rice 3 cup
  • peas ½ cup
  • spring onions 4
  • bean sprouts 1 cup
  • soy sauce 1-2 tsp
  • Ground white pepper to taste

 

Method:
Beat the egg and sesame oil in a small bowl. Heat the vegetable oil in a large frying pan. Add the rice and stir-fry for 3 to 4 minutes, until completely heated through. Add the peas, spring onion and bean sprouts. Stir-fry for about 3 minutes, turning the rice constantly. Season well with soy sauce and pepper, then push to one side of the pan. Pour the beaten egg on the other side of the pan and leave for about 10 seconds to set.

Ingredients:

  • Semolina 1/2 cup
  • Cocoa powder 1/2 cup
  • Sugar 3/4 cup
  • Milk 2 cup
  • Clarified butter 1 tbsp
  • Chocolate shavings for garnishing

Method:
Heat clarified butter in a pan and sauté semolina till golden in color. Dissolve Cocoa powder in milk and keep aside. Now add Cocoa powder dissolved milk to sautéed semolina, mix well and cook covered for some time. Open the lid and add sugar, mix well and cook uncovered. Mix well till sugar dissolved completely. Now give heart shape to ready halwa (by using cookie cutter) garnish with chocolate shavings.

Ingredients:

  • Prawns ½ kg
  • Salt ¼ tsp
  • white pepper ¼ tsp
  • baking powder ½ tsp
  • egg 1
  • corn flour 2 tbsp

For Stock:

  • spring onion 1
  • Tomato 1
  • celery 1 stalk
  • carrot 1
  • water 1 cup

for Sauce:

  • chilli garlic sauce 3 tbsp
  • ketchup 2 tbsp
  • sugar 2 tbsp
  • HP sauce 1 tbsp
  • Salt ¼ tsp
  • Worcestershire sauce 1 tbsp
  • Red food colour 1 pinch

Serving:

  • Oil 1 tbsp
  • carrot, cut in juliennes 1
  • onion, sliced 1
  • garlic, chopped 2-3 cloves

 

 

Method:
Marinate prawns with salt, pepper, baking powder, salt and add in egg and corn flour and set aside for a while. Heat oil and deep fry till crispy. Boil carrot, leek, tomato and celery and when vegetables are done strain, add ketchup, sugar, HP sauce, salt, Worcestershire sauce, chilli garlic sauce and a little red colour, mix , lastly thicken with corn flour paste. Set sauce aside. Before serving, heat oil, add crushed garlic, sauté, add sliced onion, carrots and mix in sauce, let boil and fold in the prawns and serve garnished with greens of spring onions.
