English Trifle Recipe | Lively Weekends

Ingredients for pastry cream:

  • Milk 500gm
  • Sugar 130gm
  • Egg yolks 6
  • Vanilla essence 1tsp
  • lemon zest ½ tsp

Other ingredients:

  • Strawberry jelly 1 packet
  • Strawberries 250gm
  • Cake 1 pound
  • Sugar liquor as required
  • Cream 500ml


Direction for pastry cream:
Bring the milk to a boil in a large saucepan. Whilst it is heating, mix egg yolks, sugar, vanilla essence and cornstarch together in a bowl pour the boiling milk over the egg mix and return it to the pan stir over a low heat until it just start to thicken don’t over cook remove from the heat and allow to cool slightly before pouring over the pound cake.

For assembling :
Prepare jelly according to packet instruction. Pour to triffle bowl once cool add half strawberries to the jelly. Refrigerate until jelly has set. When it sets layer pound cake fill the gaps. now pour liquor on top, set pastry cream whip the cream just until cream is firm top it now add remaining strawberries.


  • Chopped onion ½
  • Very fine chopped mushroom 4
  • Parsley fine chopped 2-3sprigs
  • Garlic 1clove
  • Sal pepper to taste
  • Butter as required

Ingredients white sauce:

  • Garlic 2 cloves
  • chopped Onions 1 tbsp
  • Flour 2 tbsp
  • Black pepper corns 3 -4
  • Mustard paste ½ tsp
  • Salt pinch
  • Fresh chepped parsley as required
  • Oregano ½ tsp
  • Vegetable stock 4tbsp

Method for sauce:
Butter in pan. Add onion and garlic. Add flour. Make a roux. Add vegetable stock. Add black pepper corns. Mustard paste. Add oregano. Then salt. Add parsley. Cream 1tbsp(optional)

Method of Chicken Roulade:
in pan. Chopped onion in. Sweat it. Add garlic. Add mushroom. Cool it. Add in cream cheese. Flatten a chicken breast. Spread the mixture. Simmering water. Poach for 20 mins. Sear till golden.


  • Fish 1 pound
  • Prawn as required
  • Sugar ½ cup
  • White pepper to taste
  • Yolk 2 egg
  • Cornstarch as required
  • Cooking oil 5 cups
  • Tomato paste 3 tbsp
  • Water 4 tbsp
  • Salt as required
  • White vinegar 1 tsp
  • Onion diced 1
  • Ginger to taste
  • Cloves 2


1) When cutting fish, leave the skin on, as this will help create the fluffy net pattern.
2) Season fish with salt and write pepper dip in egg yolk, and then coat it lightly with cornstarch.
3) Heat the wok on high heat, add oil and once oil is boiling, carefully submerge the entire fish in oil and keep fry. take the fish out when it is half cooked, then wait a few minutes until the oil temperature becomes hotter, and re-submerge the fish back in the oil.
4) Remove the fish once it golden colored and crispy. Prepare the sauce next.
5) For the sauce, leave some oil in the wok, add in the tomato paste, water ,salt to taste ,about 5 teaspoons
of sugar and white pepper to taste. then add tomatoes ,ginger and garlic ,onion.
6) In a separate cup, add 2 tablespoons of cornstarch mixed with water. slowly add this and the vinegar to the wok and stir mixture until thick.
7) Pour over the fish and enjoy
