Ingredients:

  • Lemon 1
  • Fish fillets ½ kg
  • Salt A pinch

For the Masala:

  • Cumin seeds 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Garlic 4 cloves
  • Kashmiri red chillies 8
  • Coriander seeds 1 tbsp
  • Coconut, grated 1
  • tamarind (soaked in water) few
  • Water 1/2 cup
  • Onion, sliced 1
  • Green chilies sliced 2

Method:
Marinate the fish in salt and half the lemon juice for 10 minutes. In the meanwhile, grind all the spices together using a little bit of water. Add the onions and green chilies to the masala. Add this mix to a pan and cook for about 10 minutes and keep stirring to prevent it from burning. Once done, add the marinated fish to this masala. Add some water to adjust the consistency of the curry. Let it cook till done. Serve hot with rice.

Ingredients:

Cake:

  • Sugar 2 cups
  • Flour 1-3/4 cups
  • Cocoa powder 1 cup
  • Baking powder 1- 1/2 tsp
  • Baking soda 1- 1/2 tsp
  • Salt 1 tsp
  • Eggs 2
  • Milk 1 cup
  • Oil 1/2 cup
  • vanilla essence 1 tbsp
  • Hot coffee 1 cup

Mint frosting:

  • Icing sugar 3cups
  • Butter 1/3 cup
  • Milk 2tbsp
  • Mint essence ½ tsp
  • Green food color 2drops
  • Dark chocolate grated to garnish

Method:
Grease with oil or butter and dust with cocoa powder two 9″ cake pans. Mix the sugar, flour, cocoa powder, Hot coffee ,baking powder, baking soda and salt. Beat in the eggs, milk, oil and vanilla mix well and then finally add in the water and stir it in by hand until just combined (do not turn on the mixer). Divide the batter into the pans and bake at 180 degrees c for 30-35 minutes then cool completely and frost with the mint frosting. For the mint frosting, beat icing sugar and butter in until smooth. Beat in milk, 1 tablespoon at a time, until spreadable. Add in mint essence and green food color. Spread on one cake and sandwich with the other. Frost the sides with the frosting and chill. Sprinkle with grated dark chocolate.
