Fried Pizza YumYum | Evening With Shireen

Ingredients for dough:

  • Flour 2 cups
  • Sugar 1 tsp heaped
  • Salt ½ tsp
  • Instant yeast 1 tsp heaped
  • Egg 1
  • Oil ¼ cup
  • Lukewarm water to knead

 

Ingredients for filling:

  • Chicken tikka chunk chopped 1 cup
  • Sweet corn 2 tbsp
  • Capsicum chopped 2 tbsp
  • Spring onion chopped 2 tbsp
  • Crushed red pepper 1 tsp
  • Oregano 1 tsp
  • Pizza sauce 2 tbsp
  • Grated cheese 1 cup

 

Method for dough:

Put all the ingredients together in a bowl, knead into a soft dough with lukewarm water, leave to rise for 1 hour covered, punch down, made balls with pizza dough, stuff them with filling, deep fry till light golden and crisp.

Method for filling:

Mix all the ingredients together.

Ingredients:

  • Chickpeas coked 2 cups heaped
  • Parsley chopped 1 cup
  • Garlic 1 tbsp
  • Onion chopped 1 cup
  • Green onion 1 cup
  • Green chilies chopped 4
  • Salt 1 tsp
  • Crushed red pepper 1 tsp
  • Cumin 1 tsp
  • Baking powder 1 ½ tsp
  • Flour ½ cup

Ingredients for tahini sauce

  • Yogurt 1 cup
  • Tahini 2 tbsp
  • Lemon juice 2 tbsp
  • Salt ¼ tsp
  • Garlic ½ tsp

 

Method for falafel:

Add the onion to the food processor and pulse until just finely minced with green chilies, remove, add the chick peas with all the rest in processor and pulse until they are roughly blended, return the onion back to the processor with baking powder and ¼ cup flour, the mixture will form a ball, add ¼ cup more flour, you can add more flour if the mixture is wet, transfer into a bowl, cover and refrigerate for 1 hour until chilled, deep fry with a help of cookie scoop, serve with tahini sauce.

Ingredients:

  • Cream cheese 8 ounce
  • Whipped cream 8 ounce
  • Condensed milk ½ tin
  • Strawberry sliced 2 cups
  • Pound cake ½ pound
  • Strawberry essence ¼ tsp
  • Pink color few drops
  • Strawberry jam as required
  • Sugar 2 tbsp

 

Method:

Mix cream cheese, condensed milk, whipped cream, and beat well, add in pink color and strawberry essence, mix sliced strawberries with 2 tbsp sugar, mix and refrigerate.

To assemble:

Cut pound cake into slices and sandwich with strawberry jam and put on parfait glasses, top with strawberry mixture then cream cheese mixture, decorate with cream and fresh strawberries, serve chilled.
