Ingredients For The Dough:

  • White flour ½ kg
  • Salt ½ tsp
  • Yeast 2 tsp
  • Clarified butter ½ cup
  • Lukewarm water as required

For The Kulcha Filling:

  • Butter 50 gm
  • Cabbage 250 gm
  • Potatoes (boiled) 2
  • Cumin 1 tsp
  • Red chili powder 1 tsp
  • Salt ½ tsp
  • Fresh coriander 4 tbsp
  • Green chilies 4



For the dough in a bowl add all the ingredients and knead the dough with lukewarm water. Then leave it for about 1hour. Now make 4-5 kulchas and set aside.

For The Kulcha Filling in a bowl add cabbage, boiled potatoes, cumin, red chili powder, salt, fresh coriander and green chilies. Mix well. Then add the filling in the prepared kulcha dough. Apply butter and bake it in an oven on 180 c for about 30 minutes. Lastly remove from the oven and serve hot.


  • Lady fingers ½ kg
  • Onions (sliced) 2
  • Ginger garlic 2 tsp
  • Yogurt ½ cup
  • Tomatoes 4
  • Red chili powder 2 tsp
  • Turmeric powder ½ tsp
  • Salt ½ tsp
  • Cumin (crushed) 2 tsp
  • Coriander seeds 1 tsp
  • All spice powder ½ tsp
  • Green chilies 2-3
  • Oil ½ cup
  • Coal 1 piece


Heat oil and fry the onions. Then add ginger garlic, red chili powder, salt, crushed cumin, coriander seeds, turmeric powder and tomatoes. Cook well. Once the oil comes up add yogurt and lady fingers. Cover and cook well. Lastly give smoke of coal and add green chilies and all spice powder. Dish out and serve hot.


  • Mutton (boiled) ½ kg
  • Apple gourd ½ kg
  • Tomatoes (grinded) 250 gm
  • Oil 1 cup
  • Green chilies (large) 6
  • Curry leaves 6
  • Fresh coriander ½ bunch
  • Turmeric powder 1 tsp
  • Fennel 1 tsp
  • Mustard 1 tsp
  • Salt 1 tsp
  • Nigella seeds ½ tsp
  • Cumin 2 tsp
  • Red chili powder 2 tsp
  • Garlic (crushed) 2 tsp


In a wok heat oil and fry the crushed garlic. Then add mustard, nigella seeds, salt, cumin, red chili powder, turmeric powder and fennel. Cook well. Now add grinded tomatoes, curry leaves, Fistulous – Apple gourd and boiled mutton. Cook well. Once it is cooked well, cover the wok. Lastly add fresh coriander and large green chilies. Serve hot.
