Ingredients:

For the bowls:

  • Olive oil 1 tbsp.
  • Chicken breasts 2
  • Oregano 1 tsp
  • Salt as required
  • Ground black pepper as required
  • Cooked brown rice 2 cups
  • Tomatoes, cut in wedges 2
  • Cucumber, chopped ½
  • olives 1/2 cup
  • Crumbled feta cheese 3/4 cup
  • Fresh dill for garnish

For the dressing:

  • Vinegar 2 tbsp
  • Juice lemon 1/2 lemon
  • Dried oregano 1 tsp
  • Salt as required
  • Ground black pepper as required
  • Extra-virgin olive oil 1/4 cup

Method:
Heat oil. Season the chicken fillets with with oregano, salt and pepper. Cook until golden and done and then thinly slice. To assemble the bowls, place cooked brown rice into individual bowls and top with tomatoes, cucumber, sliced chicken, olives, feta cheese and dill. To make the dressing, combine vinegar, lemon juice and dried oregano and season with salt and pepper. Slowly add olive oil, whisking to combine. Drizzle with dressing and serve.

Ingredients:

  • Mutton mince ½ kg
  • Onion, chopped 1
  • Green chilies, chopped 4
  • Coriander chopped ½ bunch
  • Eggs 1
  • Red chili powder 1 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1tsp
  • Turmeric ½ tsp
  • Ginger garlic paste 1 tsp
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Fresh breadcrumbs 1 cup

For Tomato gravy:

  • Ripe tomatoes ½ kg
  • Water 1 cup
  • Flour 1 tbsp
  • Oil 1 tbsp
  • Onion chopped 1
  • Green chilies 4
  • Red chili powder 1 tsp
  • Ginger 1” piece
  • Sugar 2 tbsp
  • Vinegar 2 tbsp
  • Salt 1 tsp

 

Method:
For tomato gravy Cook the tomatoes with water, onion, ginger, green chilies and salt. Once tomatoes are done, cool and blend, strain and set aside. Heat oil, add flour and sauté, add red chili powder, blended tomato mixture, let boil, add in the vinegar, sugar and salt and serve in a sauceboat along with the meatloaf. For meat loaf Mix together all the ingredients and let marinate for an hour. Press into a well-greased loaf pan bake at 180 degrees c for 40- 45 minutes. Serve with the tomato gray.
