Green Peas Yakhni Pulau
Ingredients:
For Yakhni
Chicken 500gm
Salt 1 tsp
Bay Leaves 2
Black Peppercorns 8
Chopped Onion 1
Water 1.5 liter

For Pulao
Rice 1 cup
Green Peas 1 cup
Chopped Onion 1 cup
Ghee 1/2 cup
Green Cardamoms 4
Whole Cloves 4
Cinnamon 1
Black Cardamoms 2
Black Peppercorns 6
Cumin Seeds 1 tsp
Cardamom 2 tsp
Chili Powder 1 tsp
Turmeric 1/4 tsp
Garam Masala 1/4 tsp
Salt 1 tsp
Chopped Tomato 1 cup
Green Whole Chilies 3
Garlic 2 tsp
Ginger 1 cube
Blade Mace 1
Stock 2 cup

Method
Wash rice, clean and wash meat. Add salt, water, onion, bay leaf, peppercorns and cook for 1 hour.
Separate meat from stock. .
Fry onion, until golden brown. Add all ginger, garlic, spices and cook for 1 min.
Add chopped tomato and cook for 5-7 min until you see oil come out.
Add rice and fry for a further minute. Then add green peas and stock. Bring to boil and Turn the heat down low and leave to cook for 10 minutes before turning off the heat. Don’t remove the lid; just leave the rice to continue cooking in the pan for about 5 minutes until you’re ready to serve.
The rice should have absorbed all the water and will just need fluffing up with a fork. Add a spoon of butter before serving.

 

 

ALOO CHICKEN TIKKI WITH GREEN CHUTNEY
Serves:6
1 cup boiled or cooked or leftover chicken or any meat
3-4 medium red potatoes
1 teaspoon red chili powder
1 teaspoon salt
¼ sliced onion
2 teaspoon whole coriander seeds crushed
¼ cup scallions
2–3 chilies sliced
1/4 cup cilantro sliced
¼ cup mint sliced
2 eggs
vegetable oil for frying
Wash the potatoes (leave skins on), and add to a large pot of boiling water. When the potatoes are tender, remove them from the water, slip the skins off, and place in a flat tray or baking dish. Mash with a potato masher or fork immediately, while hot. When cool enough to handle, add all ingredients and use your hands, mix in well.
Form potato mixture into round patties about 2 1/2 inches across and 1/2 inch thick. In a bowl, beat the eggs with a fork. Heat 1/2 cup of the oil in a large frying pan over medium-high heat. When the oil is very hot, dip a cutlet in egg to coat and place it in the frying pan. Repeat with more cutlets, When browned (about 1 minute), turn the cutlets over and brown the other side. Remove from the heat, place on brown paper or paper towels to drain, and keep warm.

GREEN CHUTNEY
Makes about 2 cups

1/4 bunch cilantro
A few sprigs of mint
1 teaspoon
1 – 2 teaspoons lemon juice
1 cups plain yogurt
½ teaspoon Salt

To make the chutney:
Place the cilantro and mint in a blender or food processor with lemon juice.
Process to a fine paste.
Add to yogurt and stir well to blend.
Add salt to taste.
Serve at room temperature.
