Ingredients:

  • Rice fully boiled ½ kg
  • Jaggery ½ kg
  • Water 1 ¼ cup
  • Milk ½ cup
  • Small cardamom crushed 1 tbsp
  • Clarified butter ½ cup
  • Big cardamoms crushed 6
  • Coconut sliced ½ cup

 

Method:

In a pan put 1 ¼ cup water with gurr, milk, crushed green cardamom, cook till gurr melts, remove dirt of gurr which comes out. In another pan, heat ½ cup ghee, add black cardamom crushed with prepared gurr sheera, coconut sliced, cook for 2 mins, add boiled rice, mix well, cover pan and lid with moist cloth and cook it on high flame for 5 mins, then lower flame and cook on dum for 25 mins till sheera dries completely.

Ingredients:

  • Milk 1 liter
  • Sugar 1 cup
  • Ice 2 cups
  • Custard powder mix in water 2 tbsp
  • Masala milk powder 3 tbsp
  • Green color ½ tsp
  • Ice cream soda essence 1 tsp

Ingredients to make china grass jelly:

  • Water 1 ½ cup
  • Sugar ½ cup
  • China grass 5 gm
  • Green color ¼ tsp
  • Chia seeds soaked 1 tbsp

Ingredients for masala milk powder:

  • Cashew nuts 1 cup
  • Almonds 1 cup
  • Pistachio ¾ cup
  • Saffron ½ tsp
  • Cardamom powder 1 tbsp heaped

Method:

Method for masala milk powder:
Put all the ingredients in a chopper just grind all for a few pulses, don’t make them into powder.

Method for china grass jelly:
Heat water, bring to boil, add sugar, china grass, cook till china grass melts, add little green color and mix, pour in a bowl and let it set, when the jelly is set, grate it with a small grater, put it in the milk along with soaked tukhmalanga, lots of ice, cool and serve.

Method for sharbat:
Boil milk, add sugar, add the dissolved custard powder with water, mix well, add masala milk powder, cook till the milk is nice and thick, remove from heat, add green color icing essence, mix well and cool.

Ingredients:

  • Split bengal gram ½ cup
  • Moong ki daal ½ cup
  • Masoor ki daal ½ cup
  • Onion chopped 1
  • Salt 1 ½ tsp
  • Chili powder 2 ½ tsp
  • Turmeric 1 tsp
  • Oil ¼ cup
  • Lemon juice ¼ cup
  • Green chilies whole 4
  • Spinach finely chopped 1 ½ cup
  • Soya chopped 2 tbsp
  • Fenugreek small 2 bunches
  • Bottle gourd cut in cubes 200 gm
  • Ginger chopped 1 tbsp
  • Tomatoes 2 chopped

 

Ingredients to temper:

  • Clarified butter ½ cup
  • Cumin whole 1 tsp
  • Curry leaves 15
  • Button red chilies 8
  • Chopped garlic 1 tbsp

Method:
Soak all the daals for 1 hour then boil all the daals together in 4 cups water with salt, chili powder, turmeric, and oil, cook till daal tender, then slightly ghoto daal with whisk, add in it all the below veggies with 2 cups water, cook till all the vegetables tender, then lastly give baghar, add lemon juice, mix and serve with boiled rice.
