Hawaiian Huli-huli Chicken | Dawat | Chef Abida Baloch

Huli-huli chicken is a grilled chicken dish in Hawaiian cuisine that is grilled and served with the special sauce.

INGREDIENTS:

  • Chicken legs (steamed) 750 gm
  • Salt to taste
  • Grounded black pepper 1tsp
  • Pineapple juice 1 cup
  • Soy sauce ¼ cup
  • Brown sugar 2 tbsp
  • Ketchup ¼ cup
  • Chicken broth ¼ cup
  • Hot sauce 2 tbsp
  • Minced garlic 3 cloves
  • Grated ginger 2 tsp
  • Pineapple rings 4-5
  • Sliced green onions 2

 

Method:
Marinate chicken with all ingredients except pineapple rings and green onions. Then grill chicken and cook marination sauce as well to serve. Grill pineapple rings as well. Garnish with green onions and serve.

Ingredients:

  • Rice 2cups
  • Split red lentil 250gm
  • Cumin 2tsp
  • Bay leaf 2
  • Cloves 6
  • Cardamom 6
  • Turmeric 2tsp
  • Onion 1
  • Garlic 1tbsp
  • Salt 2tsp
  • Yogurt ½ cup
  • Clarified butter 1cup
  • Coriander as required
  • Green chilies as required

 

Method:
Soak lentil and rice , now in a pan heat clarified butter add cumin , bay leaf , cloves . turmeric and cardamom and roast well . now add onion and fry , then add yogurt , garlic , salt and green chilies, roast well . now add 2cup water and cook . when it boils add soaked lentil and rice, when water dries give simmer sprinkle coriander and green chilies and serve.
