  • Tea bags 4
  • Boiling water 330m
  • Currants 125gm
  • Sultanas 125gm
  • Raisins 125gm
  • Flour 300gm
  • Baking powder 1 tsp
  • Brown sugar 155gm
  • Mixed cake spices 1 tsp
  • Ground cinnamon 1/2 tsp
  • Egg 1
  • Chilled butter to serve

Place tea bags and boiling water in a jug and set aside for 5 minutes to infuse, until strong. Place the currants, sultanas and raisins in a heatproof bowl. Discard the tea bags, then pour the hot tea over the fruit. Cover with plastic wrap and set aside for at least 6 hours to soak, until the fruit is plump. Grease and line a loaf pan with baking paper. Combine the flour, sugar, mixed cake spice and cinnamon in a bowl. Add the soaked fruit mixture, followed by the egg. Stir until well combined. Spoon into the prepared pan. Bake for 1 hour 20 minutes or until a skewer inserted into the center comes out clean, covering cake with foil if it is browning too quickly. Let cool in tin for an hour. Turn out onto a wire rack and set aside to cool completely. Slice and serve with slabs of butter.

  • Allspice powder 2 tsp
  • Ground nutmeg 2 tsp
  • Ground cloves 1 tsp
  • Ginger powder 1 tsp
  • Ground coriander 1 tsp
  • Ground mace 3/4 tsp

Combine all spices and store in a dark cool place for up to several months. Makes about 1/4 cup.
