Kachay Chicken Ki Dum Biryani | Lazzat | Chef Samina Jalil

Chicken marinated with different ingredients like Nutmeg ,mace, Lemon juice, grinded all spices, Red chili powder and more. Rice added to this chicken on dum makes this dish irresistible to eat.

Ingredients:

Chicken marination ingredients:

  • Chicken 1 kg
  • Papaya paste 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Clarified butter 2 tbsp
  • Fried grinded onion ½ cup
  • Yogurt 1 cup
  • Nutmeg ,mace ¾ tsp
  • Lemon juice 4 tbsp
  • Grinded all spices 1 tsp
  • Salt as required
  • Red chili powder as required
  • Mint ½ bunch
  • Green chilies 6-8
  • Black cardamom ½ tsp
  • Screwpine essence few drops
  • Grinded white cumin 1 tsp

For rice ingredients:

  • Rice 600 grams
  • Salt as required
  • Clarified butter 4 tbsp
  • Saffron as required
  • Yellow food color ¼ tsp
  • Milk 4 tbsp
  • Small cardamom 6-8
  • Whole spices 1 tbsp

 

Method:
In chicken all ingredients mix and leave to marinate for 4 to 5 hours. now spread in the wok. then boil the rice with adding the salt and whole spices and add black cardamom .when rice done then remove the water and spread the chicken .Now in the milk add yellow food color add saffron and pour in side .after this heat clarified butter and pour in rice .firstly heat on high flame and then leave on dum when its come on dum then mix and serve .

Ingredients:

  • Turnip ½ kg
  • Carrot ½ kg
  • Crushed garlic 2 tbsp
  • Water 1 liter
  • Crushed mustard seeds 2 tbsp
  • Salt as required
  • Crushed red chili 1-1/2 tbsp
  • Jaggery as required

Method:
Firstly, turnip cut in round shape. now carrot cut in long shape. now in a wok heat water and add turnip and carrot mix and boil. Now strain then cool it then add crushed mustard seed ,salt ,crushed garlic and crushed red chili mix .after this pour in bottle and leave to 5 to six days in sun light .then use it .if your desire sweet and sour taste then add as required grinded Jaggery mix .
