Ingredients:

  • Chicken 1 kg cut into 12 pieces
  • Brown onion grinded ½ cup
  • Ginger garlic 1 tbsp
  • Chili powder 1 tsp
  • Turmeric ¼ tsp
  • Salt 1 ½ tsp
  • Oil ½ cup
  • Green chilies 3 chopped
  • Raw mango cut into small pieces 1 cup

 

METHOD:

Heat ¼ cup oil, add chicken and fry for 5 mins, add green chilies, turmeric and cook in 1 cup of water till chicken tender. In another wok, heat oil, add ginger garlic paste, brown onion, salt and chili powder, fry for 2 mins, add ¼ cup water, cover and cook on slow fire for couple of mins, add chicken and the raw mango, cook on low flame for 10 mins, serve with roti.

Ingredients:

  • Flour 1 cup
  • Clarified butter ¾ cup
  • Sugar 1 cup
  • Coarsely crushed cardamom 4
  • Nutmeg grinded ¼ tsp
  • Mace grinded ¼ tsp
  • Hot water 1 – 1 ½ cup

 

METHOD:

Heat clarified butter, add coarsely crushed cardamom, add flour, fry on very low flame stirring continuously till very light golden, remove from fire, add hot water stirring continuously, put it back on fire, add sugar, mix well, add grounded nutmeg and mace, leave it on dum for 10 mins.

Ingredients:

  • Split pigeon pea 1 cup
  • Pumpkin 250 gm peeled and chopped in cubes
  • Onion 1 cup chopped
  • Chili powder 1 ½ tsp
  • Turmeric ½ tsp
  • Green cardamom 2
  • Cloves 2
  • Cinnamon 1 inch pc
  • Black cumin seeds ½ tsp
  • Roasted &crushed cumin 1 tsp
  • Mustard seeds ½ tsp
  • Dry red chilies 4
  • Curry leaves 12-15
  • Ginger garlic paste 1 tbsp
  • Tamarind juice ½ cup
  • All spice ½ tsp
  • Salt 1 ½ tsp
  • Clarified butter ¼ cup

 

METHOD:

Peel pumpkin and chop into small pieces, wash and pressure cook split pigeon pea till done. Heat clarified butter in a pan, add whole spices, cumin seeds and mustard seeds, add broken red chilies and curry leaves, add pumpkin, ginger garlic paste, turmeric powder, chili powder and salt, mix well, add tamarind juice, cook for 10 mins. Finally add boiled lentil, allspice powder and 1 to 1 ½ cup water, cook on low flame until pumpkin done, serve hot, garnish with chopped coriander leaves.
