Kofta Curry Recipe | Tarka | Chef Rida Aftab

Ingredients:

  • Chicken meatballs 1packet
  • Yogurt ½ kg
  • Gram flour 4tbsp
  • Red pepper crushed 2tsp
  • Salt 1tsp
  • Turmeric 1tsp
  • Onion 1
  • Ginger garlic paste 2tsp
  • Oil ½ cup

 

Method:
In a bowl add yogurt , gram flour , red pepper crushed , salt , turmeric , ginger garlic paste and 2 glass water mix well, now heat oil in a pan fry onions , now add meat balls and fry , lastly add yogurt mixture simmer on low flame and serve.

Ingredients:

  • Apricot 250gm
  • Cream 1packet
  • Saffron ½ tsp
  • Sugar 4tbsp
  • Milk 1liter
  • Rose water 1tsp
  • Almond, pistachios 100gm
  • Milk powder 1cup
  • Corn flour 4tbsp

 

Method:
Soak apricot over night , now deseed them and grind , now add this ground apricot in a pan with saffron cook till thick, now in another pan heat milk when it boils add 4 tbsp sugar , corn flour , cook till thick , now add rose water , powder milk , almonds and pistachios now dish out this milk mixture add apricot , lastly garnish with cream ,pistachios and almonds .

Ingredients:

  • Fish 1 kg
  • Ginger garlic paste 1 tbsp
  • Green chili powder 2 tsp
  • Garam masala powder 1 tsp
  • Salt 1 tsp
  • Cumin seeds 2 tsp
  • Lemon juice 4 tbsp
  • Carom seeds powder 1 tsp
  • Coal for steam
  • For making masala:
  • Fried onions 1 cup
  • Tomatoes 2
  • Onion 2
  • Green chilies 4
  • Butter 10 gms
  • Yogurt 250 gms
  • Salt ½ tsp

Method:
Marinate fish with ginger garlic , red chilies powder, garam masala powder, salt, cumin seeds, lemon juice, carom seeds powder and leave for half an hour.
To prepare masala add fried onions, tomatoes, onions, green chilies, yogurt, salt in a blender and process.
Heat butter add masala powder and fry.
When frying well , add water and boil it for 2 to 3 times comes , then add fish let it cook for 10 minutes.
In the end, removes from the stove and give steam.
