- Phulki 2 cups soaked for 2 hours
- Yogurt 1 kg
- Chickpeas 1 cup Boiled
- Potatoes peeled & boiled 1 cup
- Cabbage julienne 1 cup
- Onion thinly sliced 1
- Tomato 2 julienne
- Chat masala 1 tsp
- Crushed red chilies 1 ½ tsp
- Green chilies 3-4 chopped
- Coriander leaves chopped 1 tbsp
Ingredients for Green Chutney:
- Coriander leaves 1 bunch
- Green chilies 4
- Garlic 1 tsp
- Cumin 1 tsp
- Yogurt 4 tbsp
- Salt ½ tsp
Ingredients for Meethi Chutney:
- Dried apricots 125 gm soaked in 1 cup water deseeded
- Jaggery 2 tbsp
- Sugar 2 tbsp
- Red color a pinch
- Chaat masala 1 tsp
- Salt ½ tsp
Ingredients for KhattiMeethi Chutney:
- Tamarind 125 gm soaked in 1 cup water
- Salt ½ tsp
- Chili powder 1 ½ tsp
- Roasted and crushed cumin ½ tsp
- Prepared meethi chutney 4 tbsp
METHOD FOR MEETHI CHUTNEY:
Soakdried apricots in the water for 2 hours, put in the sauce pan with same water and cook for 10 mins, add jiggery and sugar, cook till it thickens and bubbles come, remove, cool, blend. Put in a bowl, add a pinch of red color, chaat masala and salt.
METHOD FOR KHATTI MEETHI CHUTNEY:
Soak tamarind in the water for 2 hours, take out the pulp, put in the blender, add salt, chili powder, roasted and crushed cumin, blend well. Lastly add prepared meethi chutney, mix well. It will become khattimeethi chutney.
METHOD FOR SERVING:
Put 4 tbsp chilled whipped yogurt in a bowl, add 4-5 soaked phulki, top with 2 tbsp boiled chickpeas, 1 tbsp boiled potato cubes, sprinkle chat masala, sliced onion, tomatoes, cabbage, coriander leaves, green chilies, top with half a cup of yogurt, mix with chutney, sprinkle chat masala and crushed red pepper, serve immediately.
METHOD FOR CHUTNEY:
Blend coriander leaves, green chilies, garlic, cumin and salt, mix in yogurt, keep aside.
- Pineapple chunks 2 cups
- Chilled water 3 cups
- Ginger powder ¼ tsp
- Sugar 1 tbsp
- Black salt ¼ tsp
- Cumin powder ¼ tsp
- Roasted n crushed cumin ¼ tsp
- Chat masala ¼ tsp
- Mango powder ¼ tsp
- Lemon juice 1 tbsp
- Ice as required
Blend pineapple, water, ginger, lemon juice and sugar, strain, add black salt, roasted & crushed cumin, chat masala, mango powder, blend again with ice, pour into tall glasses, serve with a slice of pineapple.
