Ingredients for Dough:

  • Butter 8 ounces
  • Brown sugar 1 ¾ cup
  • Eggs 2
  • Vanilla essence 1 ½ tsp
  • Flour 3 cups
  • Cocoa powder 6 tbsp
  • Baking soda 1 tsp

Ingredients for Topping:

  • Butter 4 ounce
  • Icing sugar 1 ½ cup
  • Cream cheese 8 ounce
  • Melted chocolate 1 cup
  • Candies 1 cup
  • Chocolate chips ½ cup

METHOD:

Pre-heat oven to 180 D, line two 11 inches spring foam pans with butter paper, Beat butter and brown sugar together, add the eggs and vanilla essence, sieve flour, coco and baking soda, add into the batter, divide the dough into two and press into the prepared pan, bake for 20 mins until golden, remove from oven and cool compete.

METHOD FOR TOPPING:

Beat butter and icing sugar together, add in cream cheese and melted chocolate, spread the topping over the cooled cookies, place one of the top of the other, decorate and top with chocolate chips and M&Ms.

Ingredients:

  • Boneless chicken thighs ½ kg cut into medium cubes
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Soy sauce 1 tbsp

Ingredients for Gravy:

  • Oil ¼ cup
  • Chopped garlic 3 tbsp heaped
  • Green chilies 6 slit from center sliced
  • Chicken stock 3 cups
  • Soy sauce 4 tbsp
  • Sugar 1 tbsp
  • Vinegar 1 tbsp
  • Black pepper ½ tsp heaped
  • Corn flour 2 tbsp
  • Water ¼ cup
  • Capsicum 1 cut into cubes
  • Chili garlic sauce 1 tbsp
  • Sweet chili sauce 1 tbsp

 

METHOD:

Marinate chicken with salt, black pepper and soy sauce keep for 30 mins, heat ¼ cup oil in a pan, add chopped garlic and green chilies, fry for 2 mins, now add in the marinated chicken, add chicken stock with soya sauce, sugar, vinegar, black pepper, chili sauce, sweet chili sauce, when mixture boiling, thicken with corn flour paste, lastly add in capsicums, cook for 1 more min, serve hot with fried rice.

Ingredients:

  • Chicken tikka chunks ½ cup
  • Boiled rice ½ kg
  • Oil ¼ cup
  • Cashew nuts 10
  • Eggs (beaten) 2
  • Star anise 1
  • Chopped garlic 1 tbsp
  • Onion (sliced) 1
  • Spring onion ½ cup
  • Black pepper ½ tsp
  • Salt 1 tsp
  • Sambal oleak 2 tbsp
  • Soy sauce 2 tbsp
  • Chili garlic sauce 2 tbspr

METHOD:

Heat oil in a pan, fry cashew nuts and remove. In the same oil fry chicken tikka chunks and set aside. In the same oil 2 beaten eggs with salt, scramble the eggs, remove and keep aside. In the same pan add ¼ cup more oil, add star anise, chopped garlic, sliced onion, fry till onions are soft, add sambal oleak, soy sauce, chili garlic sauce, boiled rice and fried chicken tikka chunks, mix well, cook for 5 mins, add the scrambled egg, spring onion leaves, toss slightly, remove, sprinkle with fried cashew nuts, serve with chicken chili.
