- Lemons 2
- Chicken 1 kg
- Chickpeas, boiled 1 cup
- Extra virgin olive oil 1 tablespoon
- Garlic 3-4 cloves
- Flour 1 1/2 tablespoons
- Salt To taste
- Crushed black peppercorns 3/4 teaspoon
- Chicken stock 1 1/2 cups
- Tomato puree 2-3 tablespoons
Heat olive oil. Crush garlic and add and sauté. Add chicken and sauté, and let cook. Cut each lemon into 8 equal parts and remove the seeds.
Add flour to the chicken and sauté and add salt, pepper and chicken stock, chickpeas, tomato puree and the lemon pieces and mix gently. Cover and cook till chicken is completely done. Serve hot.
- Beef Minced 400 grams
- Cloves 4
- Green cardamoms 4
- Cinnamon half inch
- Whole red chillies few
- Salt ½ tsp
- Garlic paste 4 tsp
- Ginger powder 1 tsp
- All spice powder 1 tsp
- Lemon juice 2 tsp
- Red chilli powder 2 tsp
- Salt to taste
- Coriander leaves 2 tbsp
- Yoghurt 2 cups
- Black salt pinch
- Sugar 2-4 tbsp
- Mint 2 tbsp
- Red chilli powder a pinch of
Cook the minced meat with cloves, green cardamoms, cinnamon, whole red chillies and salt. Drain when the meat is 3/4 don, reserve the stock, cool the mince. Discard the whole spices.
Blend the meat with garlic paste, ginger powder, all spice powder, lemon juice, red chilli powder, salt. Grind to a thick consistency. It should not become a paste. While grinding you could add a small quantity of stock to loosen the mixture. Add the coriander leaves lastly and then shape the mixture into meatballs. Flatten slightly and then deep fry and set aside.
Whisk the yoghurt with black salt and sugar. Place the meat vadas on a plate and pour the yoghurt all over. Garnish with mint and red chilli powder.
