Ingredients:

  • Thick green chilies 250 gm
  • Tamarind juice ½ cup
  • Brown onion ground 4 tbsp
  • Oil ¾ cup
  • Coconut powder roasted & grinded 2 tbsp
  • Peanuts roasted n grinded 2 tbsp
  • Coriander powder 1 ½ tsp
  • Cumin powder 1 ½ tsp
  • Chili powder 1 ½ tsp
  • Salt 1 tsp
  • Ginger garlic 1 tsp
  • Turmeric pinch
  • Curry leaves 15
  • Cumin seeds 1 tsp
  • Onion seeds ½ tsp
  • Mustard seeds ½ tsp
  • Fenugreek seeds ¼ tsp

 

Method:

Heat oil add curry leaves and all the seeds, when slightly brown, add in the slit green chilies, fry for 2 mins, add all the spices with grounded onions, roasted and grinded masala, add ½ cup water, cover and cook for 5 mins, open add tamarind juice, keep it on dum, lastly sprinkle coriander leaves and serve.

Ingredients:

  • Flour 1 cup
  • Plain flour 1 cup
  • Clarified butter 1 tbsp
  • Egg 1
  • Yogurt 4 tbsp
  • Salt ½ tsp
  • Soda ¼ tsp
  • Yeast 1 tsp
  • Sugar 1 tsp
  • Water for kneading

 

Method:

Sieve flour and aata, mix in ghee, add egg, salt, yogurt, soda, yeast and sugar, knead with lukewarm water to a very stiff dough, keep covered for 1 hour, roll into small puries and deep fry.

Ingredients:

  • Carrot cut in cubes 1
  • Any beans chopped 1 cup
  • Peas ½ cup
  • Potato cut in cubes 1 large
  • Cauliflower florets 1 cup
  • Cottage cheese as required
  • Fenugreek small 2 bunches
  • Onion chopped 1 cup
  • Butter 2 ounce
  • Cream ¼ cup
  • Oil ¼ cup
  • Chili powder 2 tsp
  • Cumin seeds 1 tsp
  • Green chilies chopped 2
  • Coriander leaves 2 to 3 tbsp
  • Garlic paste 3 tbsp
  • tomatoes blended 3

 

Method:

Heat oil and butter in a handi, add onion, and garlic, fry for 5 mins, add chopped choti methi with blended tomatoes, all the seasonings, and vegetables, fry well, add 1 ½ cup water, cover and cook till done, lastly add cottage cheese and remove, serve garnished with chopped greens.

Ingredients:

  • Bitter gourd sliced ½ kg
  • Oil ½ cup
  • Lemon juice ¼ cup
  • Green chilies 3 sliced
  • Chili powder 1 tsp
  • Onion 750 gm sliced
  • Fennel seeds roasted and pounded 1 tsp
  • Onion seeds ¾ tsp
  • Coriander seeds roasted /crushed 1 tbsp
  • Salt 1 tsp
  • Yogurt 1 cup
  • Jiggery 1 tbsp
  • Raw mango powder 1 tsp
  • Turmeric powder ¼ tsp
  • Tamarind 2 pieces

Method:

Peel the karelay, cut from center, remove seeds, cut in thin slices, sprinkle with 1 tbsp salt, keep for 30 mins, wash under running water 2 to 3 times, then boil karelay for 5 mins with 2 pieces of tamarind, throw the water and deep fry karelay, keep aside. Cut onions into thin slices.heat oil, fry onions till light golden, add fried karelay, mango, all the roasted spices, green chilies, yogurt, cover and cook for 10 mins till tender, serve garnished with coriander leaves.
