Mix Sabzi Kofta Biryani | Dawat

Ingredients:
FOR KOFTA:

  • Mix vegetable (chopped, cooked) 2 cup
  • Potato (boiled, mashed) 2
  • Ginger garlic paste 1/2tsp
  • Green chili (chopped) 1
  • Cayenne pepper powder 1 tsp
  • All spice powder 1/2tsp
  • Gram flour (roasted) 1/2cup
  • Salt to taste
  • Oil for frying
  • Fresh coriander (chopped) 2 tbsp

 

FOR CURRY:

  • Clarified butter 1/2cup
  • Bay leaf 1
  • Cinnamon 1 inch
  • Cardamom 3
  • Black cardamom 1
  • Cloves 7
  • Cumin 1 tsp
  • Golden onion (sliced) 2
  • Green chili 4-5
  • Ginger garlic paste 1 tbsp
  • Tomato (chopped) 3
  • Red chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Turmeric powder 1/2tsp
  • Yogurt (whisked) 1 cup
  • Mint leaves (chopped) 2 tbsp
  • Coriander (chopped) 2 tbsp
  • Salt to taste

 

 

FOR LAYERING:

  • Coriander (chopped) 4 tbsp
  • Mint leaves (chopped) 4 tbsp
  • Golden onion 4 tbsp
  • Saffron water 2 tbsp
  • Clarified butter 1 tsp
  • Food color 1/4tsp
  • Rice (boiled) 1/2kg
  • 1/2 kg boil rice

 

METHOD:
• In a bowl add cooked and chopped mix vegetables, boiled and mashed potatoes, ginger garlic paste, green chili, cayenne pepper powder, all spice powder, roasted gram flour, salt and coriander.
• Mix well, make koftas and fry well. For curry heat oil, add tomatoes and sauté well.
• Then add golden fried onions, all the spice, cinnamon, cardamom and black cardamom, cloves, cumin, ginger garlic paste, green chili, chopped tomatoes, red chili powder, bay leaf, coriander powder, turmeric powder and salt. Cook it all well.
• Now whisk the yogurt; add 2 tbsp chopped coriander and mint leaves. Mix well and add to the curry mixture, turn off the stove.
• For biryani, heat clarified butter in a pan, place a layer of rice.
• Then add gravy, chopped coriander, chopped mint leaves, golden fried onions, remaining rice, food color and saffron water.
• Cover and allow it to cook. Serve hot with koftas.

INGREDIENTS:

  • Chicken breast 2
  • Garlic (crushed) 1 tsp
  • Zucchini (sliced) 1
  • Tomatoes (sliced) 2
  • Green peppers (sliced) 1
  • Onion (sliced) 1
  • Oil 4 tbsp
  • Mixed herbs 1 tsp
  • Salt to taste
  • Pepper to taste
  • Mozzarella cheese 1/2cup
  • Parsley (chopped) for garnish

 

METHOD:
• Place pocket like cuts on chicken boneless and marinate it with salt, pepper and garlic.
• Then slice zucchini and tomatoes.
• Now in a wok add crushed garlic, zucchini, tomatoes, bell peppers, onions, mixed herbs, salt, pepper and chopped parsley and mix it all throughly.
• Then fill the chicken breasts with vegetables and mozzarella cheese.
• Bake it in a pre-heated oven for about 15-20 minutes. Serve hot.
