Ingredients:

  • Mutton 750 gm
  • Oil 1/2 kp
  • Sela rice (boiled) 1/2 kg
  • All spice (whole) 1 tbsp
  • Fried onion 1
  • Green chilies 10
  • Ginger garlic paste 1 tbsp
  • Yogurt 1 cup
  • Salt 1 ½ tsp
  • Saffron 1/2 tsp
  • Ginger 2 tbsp
  • Mint leaves 1 bunch
  • Nutmeg, mace 1/2 tsp
  • Screwpine few drops
  • Black cumin 1 tsp
  • Bay leaves 2
  • Green cardamoms 4
  • Fresh coriander for garnish

 

Method:
In the mutton add 4 cups water, salt and all spice (whole). Cook until the mutton cooks thoroughly. Then heat oil add green chilies, ginger garlic pasta, cumin, green cardamom, yogurt and mutton. Cook well. Once the water becomes dry add ginger, water, salt, mint leaves, bay leaves, nutmeg and mace. Cook properly. Now dissolve saffron in the water and add to the mutton mixture. Then add screwpine and fried onion. Mix well. Now layer the boiled rice onto the mutton mixture. Cover and cook for about 1/2 an hour. Lastly place the serving dish and garnish with fresh coriander. Serve hot.

Ingredients:

  • Surmai fish 1/2 kg
  • Lemon juice 4 tbsp
  • Cumin 1 tbsp
  • Coriander seeds 1 tsp
  • Carom powder 1/2 tsp
  • Gram flour 1/2 cup
  • Mustard oil as required (for frying)
  • Fennel seeds 1 tbsp
  • Salt 1 tsp
  • All spice powder 1 tsp
  • Red chili powder 1 tsp
  • Turmeric powder 1 tsp
  • Garlic paste 1 tbsp
  • Fresh coriander (chopped) 2 tbsp
  • Green chilies (chopped) 2

 

Method:
In a bowl add salt, lemon juice, cumin, carom powder, all spice powder, red chili powder, turmeric powder, fennel seeds, garlic paste and green chilies. Mix well. Then add surmai fish in the mixture and marinate it for about 2 hours. Now coat the fish pieces with gram flour. Then heat the mustard oil and fry the fish until golden. Lastly garnish with green coriander and serve hot.

  • Chicken tikka boti 1 packet
  • Oil ½ cup
  • Sliced onion 1 cup
  • Ginger garlic paste 2 tbsp
  • Salt ½ tsp
  • Turmeric powder ½ tsp
  • Red chili powder 2 tsp
  • Green chilies 4-5
  • All spice powder 1 tsp
  • Yogurt ½ cup
  • Tomatoes 2
  • Fresh coriander for garnish

 

Method:
In a pan heat oil and fry chicken tikka boti until golden brown. Then in a blender, add yogurt and tomatoes. Blend well. Now in a wok heat oil and sauté sliced onion. Then add ginger garlic paste and sauté well. Now add the blended mixture and cook well. Then add salt, turmeric powder, red chili powder, green chilies and all spice powder. Mix well. Now add chicken tikka boti and allow it to cook properly. Lastly garnish with fresh coriander and serve hot.
