Ingredients:

  • Flour 2 cups
  • Yeast ½ tsp
  • Baking powder ½ tsp
  • Warm milk ¾ cup
  • Salt ½ tsp
  • Sugar 1 tbsp
  • Oil 2 tbsp
  • Yogurt 2 tbsp

Ingredients for filling:

  • Mint leaves finely chopped 20
  • Onion very finely chopped ½ cup
  • Coriander leaves chopped 2 tbsp
  • Crushed red pepper 1 tsp
  • Salt ½ tsp

 

Method:

Sieve flour, add sugar, salt and yeast, put curd in the center of the flour and sprinkle baking powder on it, leave it for few seconds till it starts to bubble, add oil and knead with lukewarm milk into a soft dough, leave it covered in a greased bowl for 30 mins, brush the dough with oil, leave it for 2 hours, then knead dough again, mix all the ingredients for filling in a bowl, make balls, roll into desired shape and size, sprinkle filling all over, press gently with rolling pin, then with your fingers, cook in oven for 12 mins on 200 d, remove sprinkle with water spray, brush with ghee.

Ingredients:

  • Oil ¼ cup
  • Onion chopped 1 cup chopped
  • Chili powder 1 tsp
  • Salt 1 tsp
  • Button red chilies 6
  • Turmeric ½ tsp
  • Sugar 1 tsp
  • Tamarind pulp 3 tbsp
  • Green chilies chopped 2
  • Coriander leaves 2 tbsp
  • Bottle gourd ½ kg thinly sliced

 

 

 

Method:

Heat oil, add chopped onion, fry till pinkish, add dry seasonings with ¼ cup water, fry well, add lauki with ½ cup water, cover and cook till lauki done, then add sugar, tamarind pulp, leave it on dum, serve garnished with greens.

Ingredients:

  • Cottage cheese 100gms
  • Oil as required
  • Onions chopped ¾
  • Tomato chopped ½
  • Ginger garlic paste 1tbsp
  • Green chili chopped as required
  • Red chili powder 1tsp
  • Turmeric powder 1tsp
  • Coriander powder 1tsp
  • All spice as required
  • Salt as required
  • Coriander chopped as required
  • Whole spice as required

Method:
Put oil or ghee in a vessel.Add chopped onion and fry till a little golden.Add tomato and saute till soft.Add ginger garlic paste,chilli and saute till raw smell goes away.Then add red chilli pwdr,turmeri pwdr,salt,coriander pwdr and saute.
Add paneer and mix.and cover lid and cook.Then add garam masala on too and chopped coriander. Cook for a min..and serve hot.

Ingredients:

  • Potatoes peeled & sliced par boiled ½ kg
  • Yogurt ½ kg
  • Garlic paste 1 tsp
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Oil ¼ cup
  • Crushed red pepper ½ tsp
  • Coriander leaves chopped 2 tbsp
  • Green chilies chopped 2

Ingredients to temper:

  • Oil ¼ cup
  • Curry leaves 20
  • Button red chilies 6
  • White cumin seeds 1 tsp

Method:

Peel and cut potatoes into round slices, par boil and shallow fry in single layer for 5 mins till light golden, remove, beat yogurt, add garlic paste, salt, black pepper, crushed red pepper, mix well. In a platter spread thin layer of yogurt, arrange fried potatoes, cover with remaining yogurt and give baghar, serve garnished with chopped coriander and green chilies, give dum of coal.

Ingredients:

  • Carrots 2 cut in cubes
  • Boiled peas 1 cup
  • Capsicum chopped 1
  • Tomatoes 3 chopped
  • Lasagna noodles boiled 9 strips
  • Chili powder 1 ½ tsp
  • Garlic 1 tsp heaped
  • Oregano 1 ½ tsp
  • Potato 2 cut in cubes
  • Fresh beans finely chopped 1 cup
  • Onion chopped 1 cup
  • Oil ¼ cup
  • Turmeric ½ tsp
  • Salt 1 ½ tsp
  • Ketchup 4 tbsp heaped
  • Grated cheese 1 cup
  • Brinjal fried & chopped 1

Ingredients for cheese sauce:

  • Butter 4 ounce
  • Flour 3 tbsp
  • Milk 2 cups
  • Water 1 cup
  • Grated cheese ½ cup
  • Salt pepper n mustard 1 tsp each

Ingredients for baghar:

  • Butter 2 tbsp
  • Cumin seeds 1 tsp
  • Button red chilies 8
  • Curry leaves 20
  • Mustard seeds ½ tsp

 

Method:
Heat oil, add baghar, fry chopped onion till light pink, add in all the seasonings with finely chopped tomatoes, fry masala well, add in all the vegetables except brinjal with half cup of water cover and cook till tender and mixture dry, add in fried brinjal and keep aside. Make cheese sauce by cooking all the ingredients together.
To assemble

In a dish spread lazania strips, vegetables, capsicum, ketchup and oregano, then spread cheese sauce, repeat layers, top with grated cheese, dot again with ketchup and butter, bake on 180 d for 20 mins.
