This Pollo Asado is a classic Argentine dish. It’s cooked to perfection to achieve that right temperature on the grill.

  • Chicken thighs or legs ½ kg
  • Orange juice ¼ cup
  • Olive oil 2tbsp
  • Lemon juice 1tbsp
  • White vinegar 1tbsp
  • Paprika 1tbsp
  • Coriander ground 1tbsp
  • Salt 1tbsp
  • Garlic minced 1tbsp
  • Oregano dried 2tsp
  • Black pepper ground 1tsp
  • Cumin ground 1 tsp
  • Cloves ground 1/8tsp
  • Oil as required

Method :
For the marinade, whisk all ingredients except chicken in a bowl. Add in the chicken and refrigerate for 2-4 hours. Remove the chicken from the marinade and shake off any excess liquid. Cook chicken in a pan or over the grill till both sides are done. Serve pollo asado with warm tortillas, corn, salsa and Mexican rice.


  • Zucchini squeezed 1-1/2 cups grated
  • Butter ½ cup
  • Brown sugar 1 cup
  • Egg 1
  • Flour 1-3/4 cups
  • Baking powder 2tsp
  • Cinnamon ground ¾tsp
  • Salt ½tsp
  • Nutmeg ground ¼tsp
  • Cloves ground 1/8tsp
  • Milk ¼ cup
  • Walnuts chopped ½ cup
  • Raisins ½ cup
  • Orange zest grated 1tsp

Method :
Beat the butter and brown sugar; add the egg and mix well. Combine dry ingredients; add alternately with milk to the mixture. Stir in zucchini, nuts, raisins and orange zest. Drop by teaspoonfuls 2 inches apart onto greased baking sheets. Bake at 180° c for 12-14 minutes or until edges are lightly browned and cookies are set.
