Ingredients:

  • Cinnamon sticks 2-3 pieces
  • Star anise 1
  • Cloves 5-6
  • Black pepper 6-8
  • Cumin 1 tsp
  • Black cardamom 1
  • Bay leaf 1
  • Nutmeg & Mace ground 2 pinches
  • Mint leaves handful
  • Coriander leaves handful
  • Yogurt 1/2 cup
  • Green chilies 4-5
  • Oil ½ cup
  • Onions (sliced) 2
  • Tomatoes (sliced) 3-2
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Beef mince 500 gm
  • Turmeric powder ½ tsp
  • Red chili powder 1 tbsp
  • Salt to taste
  • Coriander powder 1 tbsp
  • Lemon slices 2-3
  • Rice (boiled with salt) ½ kg
  • Yellow food color 2 pinches

 

Method:
Heat oil in a pot and add whole spices and mix, add onions and fry until brown. Add ginger garlic paste and beef minced. Fry until it changes color. Now add tomatoes, salt, turmeric, red chili and coriander powder. Mix well and cook until oil separated then add yogurt and set aside. Then layer the biryani with mint leaves, green chilies, lemon slices, mince mixture and boiled rice. Sprinkle yellow food color. Cover and cook for 10-15 minutes on low flame. Dish out and serve hot.

Ingredients:

  • Split green gram 1 cup
  • Clarified butter ¼ cup
  • Sugar ½ cup
  • Green cardamoms 3 pods
  • Mix nuts to finish
  • Silver paper to garnish

 

Method:
Firstly, in a pan dry roast 1 cup split green gram on low flame. Roast for 15-20 minutes or until the lentil turns golden and aromatic. Then cool completely and blend to a fine powder. Now transfer the lentil powder into a wok. Now add ¼ cup ghee and roast on low flame. Continue to roast for 10 minutes or until the mixture turns golden brown. Then transfer to a bowl and cool slightly. Now prepare powdered sugar by blending ½ cup sugar and 3 pods cardamom. Transfer the powdered sugar over the mixture and mix well. Now crumble an mix well making a moist flour. Then prepare a ball sized laddus and garnish with nuts. Serve.
