Ingredients:

  • Rice 1 ½ cups
  • Oil 2 tbsp

Whole Spices:

  • Green cardamom 5 pods
  • Cloves 4
  • Bay leaf 1
  • Cinnamon ½ stick
  • Cumin seeds ½ tsp
  • Beef or mutton mince ½ kg
  • Onion (chopped) 1
  • Garlic (minced) 5 tsp
  • Ginger (minced) 2 tsp
  • Green chili (minced) 1

Ground Spices:

  • Coriander powder 3 tsp
  • Paprika 2 tsp
  • Salt 2 tsp
  • Black pepper ½ tsp
  • All spice powder ½ tsp
  • Turmeric ½ tsp
  • Cayenne pepper ¼ tsp
  • Tomatoes (chopped) 2
  • Water 1 ½ cups
  • Coriander leaves (chopped) ¼ cup
  • Mint leaves (chopped) ¼ cup

 

Method:
Heat the oil. Add the whole spices. Once the spices begin to sizzle, add the mince, onions, garlic, ginger, chili and cook until the meat is browned. Add the ground spices and the tomatoes and cook until they have softened. Put the rice on top of the meat (do not mix) then pour water on top. Sprinkle half the coriander and mint on top. Once the rice is done, put the biryani pot on a tawa and let cook on low simmer, lastly sprinkle with remaining coriander and mint and serve with raita.

Ingredients for Chocolate Chip Cookie Blondie:

  • Unsalted butter 4 oz
  • Salt ½ tsp
  • Brown sugar 1/3 cup
  • Egg 1
  • Vanilla essence 1 tsp
  • Flour 125 gm
  • Chocolate chips 2/3 cup

For Cookies and Cream Cheesecake:

  • Cream cheese 16 oz
  • Corn flour 2 tsp
  • Caster sugar ½ cup
  • Salt a pinch
  • Cream ½ cup
  • Blue gel food color few drops
  • Vanilla essence 1 tsp
  • Eggs 3
  • Dark chocolate cookies (crushed) 15

For Chocolate Ganache:

  • Dark chocolate (chopped) 6 oz
  • Cream ½ cup

To Decorate:

  • Mini chocolate chip cookies as required

 

 

Method:
For the Chocolate Chip Cookie Blondie melt the butter, salt and brown sugar in a pan. Set aside to cool slightly. Then add the egg and vanilla. Fold in half of the flour. Mix the other half with the chocolate chips and fold to combine. Place the batter in a greased and lined pan and bake at 180 degrees C for 15 minutes. Let cool. Reduce the oven temperature to 150°C to bake the cheesecake.
For the Cookies and Cream Cheesecake, beat the cream cheese, cornflour and caster sugar until creamy. Add the salt, cream, blue coloring and vanilla and mix until smooth. Add the eggs, one at a time, and mix on low speed. Add the crushed cookies and fold to combine. Pour the cheesecake batter over the cooled blondie layer. Tightly double wrap the bottom of your springform pan with two pieces of foil. Then place the springform pan in a larger baking tray and fill the baking tray with hot water which should be about halfway up the sides of the springform pan. Bake at 150 degrees C for 60 minutes or until the cheesecake is set but slightly jiggly in the middle. Turn off the oven, and let the cheesecake cool for 30 minutes inside the oven with the oven door left ajar. Remove the cheesecake from the oven and the water bath, and let cool to room temperature completely; this can take up to 2-3 hours. Cover the cheesecake and refrigerate overnight.
For the chocolate ganache, melt chocolate and cream in a pan until smooth and then let cool to a thick but spreadable consistency. To decorate, once the cheesecake is chilled, spread the chocolate ganache on the sides of the cheesecake, and then cover the surface on top as well. Cover top with chocolate chip cookies, slice and serve.
