- Chicken 1/2 kg
- Cooked rice 2 cups
- Oil 1/2 cup
- Whole spices as required
- Brown onions 2 large
- Ginger garlic paste 1tbsp
- All spice powder 1tbsp
- Turmeric powder 1/2 tsp
- Red chili powder 1tbsp
- Coriander powder 1tbsp
- Red, orange, yellow color a pinch
- Screwpine 1tsp
- Plum 2-3
- Tomatoes 3
Heat oil in a saucepan, brown onions, add whole spices with chicken and cook for 2 minutes. Then add ginger garlic paste, all spice powder, turmeric powder, red chili powder, coriander powder and tomatoes. Cook until tender and well cooked. Now layer the rice with chicken mixture. Then add all the 3 colors, Screwpine and plum. Lower the heat to a minimum and cook the rice for another 15 minutes. Serve hot.
- Apple gourd, (peeled, sliced and hard seeds removed) 8
- Onion (finely chopped) 1
- Garlic (minced) 4 cloves
- Tomato (chopped) 2
- Coriander powder 1/2 tsp
- Cumin powder 1/2 tsp
- All spice powder 1 tsp
- Red chili powder 1 tsp
- Oil 1/4 cup
- Cumin seeds 1 tsp
- Turmeric powder 1/4 tsp
- Salt to taste
Heat oil in a pan and add the cumin seeds. Once they splutter add the garlic, onion and sauté till the onion turns translucent. Then add chopped tomato, apple gourd, turmeric powder, salt and red chili powder. Mix well. Cover and cook till the vegetable becomes soft, stirring once or twice. Now add little water if required.
When the vegetables are nearly cooked sprinkle cumin powder, coriander powder and all spice powder and stir. Cook for about 2 minutes and then turn off the heat.
Transfer Tinda Sabzi and serve hot garnished with coriander leaves.
