Ingredients for Sambar Masala:

  • Split Bengal gram ¾ cup
  • Fenugreek seeds ½ tsp
  • Whole button red chilies 15
  • Oil as required

 

METHOD FOR SAMBAR MASALA:

Roast all the ingredients in a very little oil, when cool, grind to a fine powder and save in an air tight jar.

Ingredients for Sambar

Split Red gram 1 cup
Onions 2
Carrot 1
Bottle gourd 250 gm
Tomatoes 2
Curry leaves 12
Tamarind pulp ½ cup
Whole button red chilies ¾ tsp

METHOD:

Soak lentils for 1 hour, boil the lentils in 4 cups water with 1 tbsp sambar masala and cook until tender, add all the chopped vegetables to lentil and cook until vegetables done. Lastly add tamarind pulp, give temper of curry leaves and ¾ tsp whole red chili, serve with bonde.

Ingredients:

  • Oil 1 cup
  • Potatoes 1 kg big ones cut into halves
  • Sela Rice 750 gm soaked for 2 hours, boiled with 3 tbsp salt, mixed whole spices, bay
  • leaf and black cumin
  • Ginger garlic paste 2 tbsp
  • Tomatoes 4
  • Chili powder 3 tsp heaped
  • Turmeric ½ tsp heaped
  • Water ¼ cup
  • Salt 2 ½ tsp
  • Coriander powder 2 ½ tsp
  • Green chilies 10-12
  • Yogurt 1 ½ cup
  • Coriander leaves ½ bunch finely chopped
  • Mint leaves ½ bunch finely chopped
  • Plum 15
  • Allspice 1 tsp
  • Screw pine water 1 tbsp
  • Yellow color ¼ tsp
  • Brown onion 1 cup heaped
  • Boiled eggs for garnish

METHOD:

Heat oil, add ginger garlic, fry, add ½ cup brown onion, sliced tomatoes and fry with ¼ cup water till soft, add big pieces of potatoes with salt, chili powder, turmeric, coriander, whole green chilies, yogurt, fry well, add ½ cup water, cover and cook till potato tender and oil comes on top, remove oil in a cup, then in your potato mixture add plum, coriander, mint, allspice, mix all well. In a pan, spread ¼ cup oil, ¼ cup water, half qty of boiled rice then add potato mixture, chopped green masala, remaining rice, top with screw pine water and color mixture then remaining ground onion, drizzle the oil that we removed, leave it on dum for 15 mins, can be served with boiled eggs.

Ingredients:

  • Broken rice ½ cup
  • Split black gram 1 ½ cup
  • Salt 1 tsp heaped
  • Crushed black pepper 1 tsp
  • Ginger 1 inch pc crushed
  • Green chilies 6-8
  • Coriander leaves ½ cup
  • Clarified butter 1/2cup
  • Oil ½ cup

 

Ingredients for Chutney:

  • Coriander leaves ½ bunch
  • Coconut fresh grated 1 cup
  • Green chilies 6
  • Split Bengal gram 2 tbsp
  • Salt ½ tsp
  • Yogurt ½ cup

 

METHOD FOR BHONDE:

Soak both for 6 hours, remove water and grind both well in chopper adding ¼ cup water if required, grind very well until smooth, leave it in a bowl covered in the oven overnight, then before frying add in 1 tsp salt heaped, crushed black pepper 1 tsp, ginger 1 inch piece crushed, green chilies 6-8, coriander leaves ½ cup, grind it together, grind it well without water, add to the lentil mixture, the batter should be thick. Deep fry in half quantity of clarified butter and half quantity of oil, put badas from your hands into small balls and deep fry.

METHOD FOR CHUTNEY:

Blend all together with yogurt, do not add water, remove in a bowl and give temper.
Ingredients for Temper

Oil 3 tbsp
Split black gram ½ tsp
Mustard seeds ½ tsp
Curry leaves 15
Button red chilies 4

METHOD FOR TEMPER:

Fry and add temper to the chutney.
