Ingredients:

  • Chicken 1 kg whole
  • Tandoori masala 2tbsp
  • Yogurt ½ cup
  • Salt 1 tsp
  • red chili powder 1 tsp
  • Ginger garlic 1 tbsp
  • Tomatoes 2 blended
  • Brown onion grinded ½ cup
  • Coriander leaves grinded 2 tsp
  • Oil ¼ cup
  • Tomato paste 2 tbsp
  • Allspice ½ tsp heaped
  • Crushed red pepper 1 tsp
  • Coriander leaves 2 tbsp
  • Green chilies 3
  • Potato 1 large cut into cubes and deep fried
  • Boiled eggs 2

Ingredientsfor Saffron Rice:

  • Boil rice ½ kg
  • Oil 3 tbsp
  • Chicken powder 1 tsp
  • Yellow color ¼ tsp
  • Saffron essence ½ tsp
  • Cashew nuts fried 8-10
  • Raisins 2 tbsp fried

 

METHOD FOR RICE:

Heat oil in a pan, add in boiled rice, chicken powder with ¼ cup water, top with yellow color, saffron essence, leave it on dum.

METHOD FOR CHICKEN:

In a pan put 1 cup water with whole chicken, tandoori masala, yogurt, salt, chili powder, ginger garlic paste, cover and cook till chicken tender. In a pan heat oil, add blended tomatoes, crushed red pepper, allspice powder, fry for 5 mins, add in the whole chicken, leave it on dum for 10 mins, then add in whole green chilies and coriander leaves.

TO ASSEMBLE:

Put rice on a serving platter surround with boiled and fried potatoes, boiled eggs, cooked chicken in the center, top with fried nuts, serve immediately.

Ingredients:

  • Flour 4 cups
  • Semolina 250 gm
  • Sugar ¾ cup
  • Clarified butter ½ cup
  • Desiccated coconut ½ cup
  • Cardamom powder ½ tsp
  • Egg 1
  • Salt 1 tsp
  • Warm milk ¾ cup

 

Method:
In a bowl mix flour, semolina, sugar, salt, cardamom powder, desiccated coconut and egg. Then add warm milk and knead normal dough. Leave it for an hour. Now spread the dough evenly and cut with cookie cutter. Heat clarified butter and fry in slow heat. Serve.

Ingredients:

  • Chicken 1 kg
  • Tandoori masala 2 tbsp
  • Red chili powder 1 ½ tsp
  • Turmeric powder ¼ tsp
  • Fenugreek seeds 1 tsp
  • Honey 1 tbsp
  • Ginger garlic 1 tsp
  • Ketchup ¼ cup
  • Oil ¼ cup
  • Salt ¾ tsp

 

Method:
Marinate chicken with tandoori masala, red chili powder, turmeric powder, fenugreek seeds, honey, ginger garlic, ketchup and salt for about 30 minutes. Now heat oil in a wok add the chicken, cover and cook for 30 minutes on low flame until it is fully done. Serve hot with parathas.
