Ingredients For Pink Sharbat:

  • Milk 2 cups
  • Water 1 cup
  • Sugar 2 & ½ tbsp
  • Mix dry fruits (coarsely grounded) 15-20
  • Desiccated coconut 1 tbsp
  • Cardamom powder ½ tsp
  • Red syrup 3 tbsp
  • Basil seeds (soaked) 5 tbsp
  • Red jelly (cubes) as required
  • Green jelly (cubes) as required
  • Ice cubes as required

For Green Sharbat:

  • Milk 2 cups
  • Water 1 cup
  • Sugar 2 & ½ tbsp
  • Pistachio (coarsely grounded) 8-10
  • Basil seeds (soaked) 5 tbsp
  • Green syrup 3 tbsp
  • Red jelly (cubes) as required
  • Green jelly (cubes) as required
  • Ice cubes as required

For White Sharbat:

  • Milk 2 cups
  • Water 1 cup
  • Sugar 2 & ½ tbsp
  • Condensed milk 3 tbsp
  • Almonds (coarsely grounded) 8-10
  • Cardamom powder ½ tsp
  • Basil seeds (soaked) 5 tbsp
  • Red jelly (cubes) as required
  • Green jelly (cubes) as required
  • Ice cubes as required

 

Method:
Pink sharbat: (makes: 3-4 glasses)
In jug, add milk, water, sugar and mix well until sugar dissolves. Add mix dry fruits, desiccated coconut, cardamom powder, red syrup, basil seeds and mix well. Add red jelly and green jelly, mix well. In serving glass, add ice cubes, red jelly, green jelly, pink syrup & serve.

Green sharbat: (makes: 3-4 glasses)
In jug, add milk, water, sugar and mix well until sugar dissolves. Add pistachio, basil seeds and green syrup, mix well. Add red jelly and green jelly, mix well. In serving glass, add ice cubes, red jelly, green jelly, green syrup & serve.

White sharbat: (makes: 3-4 glasses)
In jug, add milk, water, sugar and mix well until sugar dissolves. Add condensed milk, almonds, cardamom powder, basil seeds and mix well. Add red jelly and green jelly, mix well. In serving glass, add ice cubes, green jelly, red jelly, white syrup & serve.

Ingredients:

  • Oil 1.5 tbsp
  • Cumin seeds ½ tsp
  • Cloves 6
  • Black peppers 15
  • Green cardamoms 5
  • Bay leaves 2
  • Cinnamon sticks 5″
  • Ginger garlic 2 tsp
  • Salt ½ tsp
  • Red chili powder 1 tsp
  • Coriander powder 1 tsp
  • Yogurt 2 tbsp
  • Brown onion 2 tbsp
  • Boiled chickpeas 2 cups
  • Chicken stock 2 cups
  • Soaked rice 1.5 cups
  • Salt 1 tsp
  • Lemon juice 1 tsp
  • Brown onion for topping

 

Method:
In a pan, heat up oil and add whole all spice powder (cumin seeds, black pepper, cloves, green cardamom, cinnamon stick and let it pop for few seconds. As the whole all spices gets aromatic, add brown rice and ginger garlic paste. Sauté for few seconds on high heat. Now add red chili powder, coriander powder, and salt. Stir for few minutes until the oil float over the surface. Now add yoghurt and again stir for few minutes to blend the taste of yoghurt. Now add boiled chickpeas and gently mix in curry. Check the salt status. Add chana stock or chicken stock. Cover and let it boil on high – medium heat for 10 minutes. Now add soaked rice. Gently mix rice. Add salt for rice. Now cover and cook for 15 minutes. Initial 5 minutes on high heat then turn the heat to low medium for next 10 minutes. After 15 minutes, add lemon water and sprinkle brown onion and cover again for 10 minutes on low heat (dum). After this, chana pulao is ready to serve!

Ingredients:

  • Semolina 1 cup
  • Hot milk 3 cups
  • Sugar 150gm
  • Raisins 3 tbsp
  • Almonds (roughly powdered) 3 tbsp
  • Cashew nuts (chopped) 12 to 15
  • Cardamom powder 1/2 tsp
  • Clarified butter 3 tbsp

For Garnishing:

  • Almonds (finely chopped) 6 to 8
  • Pistachios (finely chopped) 6 to 8

 

Method:
Heat clarified butter, fry cashews till golden, remove it and keep aside. Add semolina and almond powder, roast over low flame till 8-10 minutes. Add hot milk, stirring at the same time use a whisk so that no lumps form. Add raisins, cook over low flame, till water is absorbed. Add sugar and cardamom powder. Stir gently till sugar melts, and moisture released is re-absorbed. Add cashews mix well. Lastly garnish with almonds and pistachios. Serve hot.
