Sindhi Biryani
Ingredients:
Basamati Rice 3 cups
Chicken 1 kg
Yogurt 1 cup
Oil 1 cup
Lemons 2
Onions (finely chopped) 3
Potatoes 4
Tomatoes 4
Green Chilies 4
Mint Leaves few
Yellow Food Color a pinch
Milk ¼ cup
Dry Plums 250 grams
Red Chili Powder 1 tsp
All spice (ground) 1 tsp
Ginger Garlic Paste 1 tbsp
White Vinegar 1 tbsp
Coriander (ground) 2 tbsp
Salt to taste

Method:
Marinate 1 kg chicken with 2 tbsp ground coriander, 1 tsp red chili powder, 1 tbsp ginger garlic paste, salt, 1 tsp ground all spice and 1 cup yogurt. Keep it aside for a while.
Heat oil in a pan, add 3 finely chopped onions and fry, till they turn brown, remove and spread them on a paper and sprinkle a pinch on alt on it.
When onions are slightly cool and crispy, take half of it and crush with your hand. Add this crushed onion in the marinated chicken.
Now add the marinated meat in the oil, and cook it on low flame till it gets tender.
Now take soaked dried plum and remove its pulp, removing the seeds.
Simultaneously fry chopped tomatoes then fry chopped potatoes.
Now cook dried plum, fried tomatoes, fried potatoes, 2 green chilies and lemon juice, on low flame.
Now take a large pan add salt, mint leaves, 2 green chilies and 1 tbsp white vinegar with 3 cups basmati rice. Cook till the rice are ¾ ready.
Now grease a pan with clarified butter, spread a layer of half rice now spread cooked marinated meat layer, then again a layer of rice with remaining crushed onions. Leave it to simmer on medium flame. Turn the flame low after 5 minutes.
Before serving, mix it well with a soccer plate. Add a mixture of ¼ cup milk and a pinch of yellow food color in the pan.
Serve it with tomatoes and onion raita.
