Here is our very own twisted version of Thai Fried Rice; topped with fresh veggies and egg swirls.
- Boiled rice 2 cups
- Red curry paste 1 tbsp
- Chopped green chilies 2
- Crushed ginger 1 tsp
- Crushed garlic 1 tsp
- Chicken stock 1 cup
- Green onion 4 tbsp
- Chopped capsicum 4 tbsp
- Chopped green coriander 4 tbsp
- Eggs 2
- Oil 4 tbsp
- Salt 2 pinches
- Spring onion 4 tbsp
- Red chili for plating
- Spring onion for garnishing
- Fried omelet for serving
- Sliced tomato for garnishing
- Heat oil in a wok and add crushed ginger garlic. Fry it well.
- Add in chopped onion and sauté it.
- Add red curry paste with chicken stock and cook it till it boils.
- Add in boiled rice and mix well. Leave it for steaming so the favors blend in well.
- Add green onion and chopped capsicum.
- Mix salt in egg and fry like omelet. Remove and roll.
- Cut it so that it forms egg swirls and serve it with rice.
- Serve the rice hot and fresh!
