Ingredients

Chicken liver cubes 500gm
Ginger & garlic paste 1tbsp
Green chili small paste 2tbsp
Oil ¼ cup
Yogurt ½ cup
Tomato puree 1 cup
Salt as required
Red chili crushed 1tbsp
Turmeric powder ½tsp
All spice 1tsp
Carom 1tsp
Cumin powder 1tsp
Coriander cutter 1
Dried fenugreek 1tsp
coriander chopped as required
Water as required
Ingredients for parathas
Flour 1 cup
Salt as required
Oil 2tbsp
Water as required

METHOD:

Paratha bananay kay liye ek mixing bowl men maida or tamam ajza dal ker pani kay sath aata goondh len phir chotay chotay pairay bana ker bail len or phir tawa garam ker kay bagher oil ya ghee kay parathay saik ker ek taraf rakh len.

Kaleji bananay kay liye ek mixing bowl men kaleji ko achi tarhan dho ker dalen phir us men lehsan or adrak ka paste or dahi dal ker qasoori methi kay ilawa tamam sookhay masalay shamil ker kay kaleji ko marinade ker len.
Phir taway per oil garma ker kay marinated kaleji dal ker fry ker len phir tomato puree dal ker mix Karen or dkakan laga ker itna pakaen kay kaleji gar jae phir hara dhaniya or qasoori methi dal ker achi tarhan bhoon len. Phir parathay ko kaleji kay masalay men laga ker kaleji kay sath serve Karen.

Ingredients for potato filling:

  • Potato boiled and mashed 1 Cup
  • Chicken boiled and shredded ½ cup
  • Mint leaf chopped 2tbsp
  • Green chili chopped 1tbsp
  • Garlic paste 1tbsp
  • Salt as required
  • Black pepper 1tsp
  • Cumin crushed 1tsp
  • Coriander crushed 1tsp
  • Chicken powder 1tsp

Ingredients for pocket making :

  • Potato filling as required
  • Manda patti 6 to 8
  • Flour as required
  • Eggs 2 – 3
  • Bread crumbs as required
  • Oil for frying

METHOD:
Filling bananay kay liye aalo, chicken or tamam ajza ek mixing bowl men dal ker mix ker len.
Pocket bananay kay liye mandha patti per potato filling rakh ker pocket bana len phir pocket ko mayday se coat ker kay anday men dip Karen or phir bread crumbs laga ker. Halkay garam oil men fry ker len or jab golden color ajae to nikal ker serve Karen.

Ingredients:

  • Chicken quarter piece 2
  • Garlic paste 1tbsp
  • Green chili small paste 1tbsp
  • Yogurt ½ cup
  • Lemon juice 1tbsp
  • Oil 2 tbsp
  • White pepper 1tsp
  • Chicken powder 1tsp
  • Salt 1tsp
  • Cumin powder 1tsp
  • Green papaya 1tbsp
  • Vinegar 2-3tbsp

Ingredients for cheese sauce:

  • Mayonnaise ¼ cup
  • Mozzarella Cheese ¼ cup
  • Water 1 -2 tbsp
  • Red chili powder ¼ tsp
  • Zeera powder ¼ tsp

METHOD:
Cheese sauce bananay kay liye mayonnaise, cheese or tamam ajza ek frying pan men dal ker 2 se 3 minutes tak paka len sauce tayyar hojae ga.
Tikka bananay kay liye pehlay chicken ko 20 se 25 minutes kay liye ek bowl men pani dal ker sirkay or namak men bhigo den. Phir chicken ko pani se nikal ker khushk ker len phir ek bowl men chicken, lehsan or mirchon ka paste, dahi, papita or tamam masalay dal ker chicken ko 3 se 4 hours kay liye marinade ker len. Phir chicken ko steamer men dal ker 30 minutes kay liye steam ker lay ya to karahi men dal ker thoray se pani kay sath chicken ko gala len. Jab chicken gal jaen to grill pan ko halka oil laga ker khoob garam ker len phir chicken ko ek ek minute dono side se grill ker len. Phir tikkay ko serving platter men rakh ker garam garam cheese sauce dal ker serve Karen.

    I want to request all chefs to tell all recipes in grams rather than cups. We dont buy any thing in cups from market. We get them in grams.
