Ingredients:

  • Chicken strips 250 grams
  • Chili garlic sauce 1 tbsp
  • Ginger garlic paste 1 tsp
  • Soy sauce 1 tsp
  • Chili sauce 1 tsp
  • Chicken powder ½ tsp
  • Salt to taste
  • Red chili powder 1 tsp
  • Crushed red chilies 1 tsp
  • Egg ½
  • Flour 1 tbsp
  • Roll patti as required

 

Method:
Marinate chicken strips with all the ingredients for 1 hour. Cut roll patti into thin strips, fold chicken strips into roll patti and deep fry and serve .

Ingredients:

  • Mutton 1kg

Ingredients for dry masala:

  • Round red chilies 5
  • Cayenne chilli 4-5
  • Coriander seeds 1tbsp
  • Cumin seeds 1-1/2 tsp
  • Fennel seeds 1-1/2 tsp
  • Black pepper whole 1tbsp
  • Dried fenugreek 1tbsp
  • Mustard seeds ½ tsp
  • Brown sugar 1-1/2 tsp
  • Chicken powder ½ tsp
  • Salt 1tsp

Ingredients for wet paste:

  • Yogurt 1tbsp
  • Onion 1
  • Garlic 5-6clove
  • Tamarind paste 1tbsp
  • Clarified butter ½ cup

Ingredients for karahi:

  • Oil as required
  • Green chilies 3-4
  • Curry leaves 4-5
  • Turmeric powder ½ tsp
  • Ginger chopped 1tbsp
  • Red chili powder ½ tsp
  • Black pepper 1tsp
  • Cumin roasted crushed 1-1/2 tsp
  • Coriander roasted crushed 1-1/2 tsp
  • Yogurt 3-4tbsp
  • Tomatoes 4-5
  • Fenugreek dried 1tsp
  • Green chilies as required
  • Ginger strips 2tbsp

 

Method:
Grind all the dry ingredients and make a fine powder , now blend all wet ingredients t o make paste , now mix both dry and wet ingredients , now marinate mutton in this batter for 4 to 6 hours , now bake it or boil for half and hour , to make karahi heat oil sauté ginger , now stir add green chilies , curry leaves and all the spices except dried fenugreek mix and add this in mutton and its stock also, cook on high flame till oil separates , lastly garnish with green chilies and serve .

Ingredients for kofta:

  • Beef ½ kg
  • Onion 1
  • Ginger garlic paste 2tbsp
  • Salt and pepper 1tsp
  • Green chilies 3
  • All spice powder ½ tsp
  • Cumin powder ½ tsp
  • Bread slice 1
  • Coriander as required

Ingredients for masala:

  • Onion 1
  • Desiccated coconut ½ cup
  • Curry leaves 4 to 6
  • Green chilies 4 to 6
  • Coriander ½ bunch

Other Ingredients:

  • Yogurt 1 cup
  • Ground cumin ½ tsp
  • Ground coriander ½ tsp
  • Curry leaves 4 to 6
  • All spice powder 1 tsp
  • Salt to taste
  • Green food color
  • Asafoetida ¼ tsp
  • Chicken powder 1 tsp
  • Oil 1/2 cup

Ingredients for rice:

  • Rice ½ kg
  • Whole spice as required
  • Salt as required

Ingredients to tempering:

Clarified butter 2tbsp
Red pepper crushed ½ tsp
Cumin powder ½ tsp

 

Method:

Blend all the masala ingredient with beef, now make meatballs and shallow fry in 1tbsp oil, now in a wok add ghee and oil , blended masala, ginger garlic paste , yougurt, coriander , cumin, curry leaves asetofitida , chicken powder , all spice and roast well till oil comes on top , then add meatballs , half done rice , whole spice and salt , now give layer of biryani, food color, lasty give baghar and garnish with coriander and serve .
