Triple Chocolate Brownies
200gm unsalted butter
8 ounces dark chocolate
1 cups caster sugar
1 tsp vanilla essence
1 cup flour
1 tbsp heaped cocoa powder
1/2 tsp salt
1/3 cup white chocolate chips
1/3 cup dark chocolate chips
Cocoa powder for garnish
Preheat the oven to 180 degrees.
Line a 9 by 9 inch square tin with baking parchment.
Melt the butter and dark chocolate together in a large heavy based pan over a low heat.
Allow the chocolate mixture to cool a little, then add the eggs one at a time and stir.
Add vanilla essence and sugar. Fold in the flour and salt. Then stir in the white chocolate chips, and the dark chocolate chips. Beat to combine then scrape and pour the brownie mixture into the prepared tin.
Bake for about 20 minutes. You can see when the brownies are ready because the top dries to a slightly paler brown speckle, while the middle remains dark, dense and gooey.
To serve, cut into squares while still warm and pile up on a large plate, sprinkling with cocoa powder pushed with a teaspoon through a small sieve.
