Ingredients:

  • Milk chocolate 100 gm
  • Dark chocolate 100 gm
  • White chocolate 100 gm
  • Vanilla whipped cream 150 gm
  • Dairy whipped cream 300 gm
  • Gelatin powder 3 tsp
  • Water as required
  • Chocolate flakes for garnish
  • White ganache for garnish
  • Milky ganache for garnish

METHOD:
Add all 3 chocolate in 3 separate bowl. Add 50 gm cream in each bowl, mix well. Make 3 different ganache. Add 1 tbsp of dissolved gelatin in 3 ganache and 100 gm cream in it, mix well. Layer 3 different types of cream in serving dish and pour chocolate flakes. Topping with white ganache and milky ganache.

Ingredients:

  • Mix vegetable as required
  • Oil 3 to 4 tbsp
  • Ginger garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Tomato puree 1 cup
  • Fresh dill chopped 2 tbsp
  • Capsicum julienned 1/2
  • Onion julienned 1/2
  • Green chili julienned 2
  • Salt to taste
  • Red chili crushed 1 tsp
  • Chicken powder 1 tsp
  • Lemon juice 2 tbsp

METHOD:
Heat oil fry drum sticks well to turn into caramelized. Add ginger garlic paste and green chilies paste cook well. Add tomato puree and all spices cook for 10 minute leave for simmer. Add capsicum, onion, green chilies and lemon juice cook well. Remove and serve.

Ingredients:

Chipotle Sauce:

  • Kashmiri chili 5 to 6
  • Garlic 2 to 3
  • Onion 1 medium
  • Tomato paste 3 to 4 tbsp
  • Vinegar 2 to 3 tbsp
  • Salt to taste
  • Water as required

For Making:

  • Oil 2 tbsp
  • Onion chopped 2 tbsp
  • Garlic chopped 2 cloves
  • Black pepper 1 pinch
  • Beef julienne ½ cup
  • Chipotle sauce 2 to 3 tbsp
  • Water as required
  • Boiled rice 1 cup

METHOD:
Soaked Kashmiri chili for 2 hour. Add chili and all ingredients in blender well. Heat oil add onion and garlic sauté well. Add beef cook well. Add chipotle sauce, black pepper and water cook till beef is done and sauce becomes thick. Remove in serving dish add boiled rice then pour chipotle sauce serve.
