Ingredients:

  • Chicken with bone 500 gm
  • Potato cubes 1 cup
  • Green peas ½ cup
  • Carrot ¼ cup
  • Rice 500 gm
  • Oil ¼ cup
  • Ginger & garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Onion slices ½ cup
  • Crushed coriander 1 tbsp
  • Salt as required
  • Chicken powder 1 tbsp
  • Clove 5 -6
  • Cinnamon 2 -3
  • Oil of star anise 5 -6
  • Water as required

METHOD:
Heat oil in a saucepan, add onion, golden brown, then add garlic, ginger and green chili paste, add chicken and roast it. After that add all the spices, potato, peas, carrot, water and cook the chicken stock for 20-25 minutes, then add rice and cook till the water comes to the surface of the rice. Leave it on for 15-20 minutes for dam.

Ingredients:

  • Mutton trotters (boiled) 6 pieces
  • Oil ¼ cup
  • Onion slices ¼ cup
  • Ginger & garlic paste 1 tbsp
  • Salt as required
  • Red chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Turmeric powder 1 tbsp
  • All spice powder 1 tbsp
  • Mutton stock 4-5 cups
  • Black Cumin 1 tbsp
  • Lemon as required
  • Crushed Coriander for garnish
  • Green Chili slice for garnish

For oil Tempering:

  • Oil ½ cup
  • Fenugreek seeds 1 tbsp
  • Garlic 1 tbsp
  • Crushed cumin 1 tbsp
  • Red chili powder 1 tbsp

 

METHOD:
In a pan of heated oil add onion slices and cook it until it become light brown now add garlic, ginger paste, boiled mutton trotters and fry it well, add dry spices and again fry it well for 1 to 2 min, now add mutton stock and heat it on low flame for 30 mins, in the end for tempering in heated oil add fenugreek seeds, garlic, crushed cumin, red chili powder then garnish it with lemon, crushed coriander and green chili slice

Ingredients:

  • Meatballs 10 -12
  • Oil ¼ cup
  • Onion slices ½ cup
  • Ginger & garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Coriander paste 2 tbsp
  • Mint paste 2 tbsp
  • Boiled Spinach paste ½ cup
  • Yogurt ½ cup
  • Salt as required
  • Red chili powder 1 tbsp
  • Turmeric ½ tsp
  • Crushed Cumin 1 tsp
  • Crushed whole Coriander 1 tbsp
  • Chaat masala 1 tsp
  • Butter 2 tbsp
  • Cream 2 tbsp
  • Green chili big julienne 1 -2
  • Crushed Coriander 1 tbsp
  • Ginger chopped for garnish

METHOD:
Heat oil in a pan add onion slices and cook it until it become light brown now Add garlic ginger paste, mint paste, boiled spinach paste and coriander paste in it and fry. Then Add dry spices, green paste and yogurt and fry all the spices well, once the oil separates add meat balls, some quantity of water and leave it for simmer, after that add butter, cream and big green chili and cook it well so that oil separates from it, in the end add crushed coriander and ginger in it over top and serve it.

Ingredients:

  • Coffee 2 tbsp
  • Sugar 2 tbsp
  • Water 1 tbsp
  • Milk 2 -3 cup
  • Almonds (ground) 8-10
  • Cream as required

METHOD:
In a mixing bowl put coffee, sugar and water, stir it and make a paste, on the other hand take a pan put milk and saffron/saffron essence and boil it, now in a cup put coffee water and add saffron milk in it and slightly stir ,in the end add cream on it and serve it .
