Ingredients:

  • Rice 700 gm
  • Sugar 2 cups
  • Green cardamoms 10
  • Cloves 6
  • Milk 1/4 cup
  • Coconut crushed 100 gm
  • Coconut slices 50 gm
  • Dry dates 100 gm
  • Ashrafi (green & red) 100 gm
  • Raisins 50 gm
  • Yellow food color 1 tsp
  • Clarified butter 1/4 cup
  • Whole dried milk 100 gm
  • Oil 3 tbsp

Method:
Soak rice in water for one hour, in a pan add water, food color, 50g dry dates, 5 cardamoms and boil rice until 70% done. In a pan heat clarified butter, add cloves, 5 green cardamoms and cook for a minute. Then add half cooked rice, sprinkle one cup sugar and repeat the layer. Steam for 5 minutes on low heat. Mix well add ashrafi, grapes, raisins, whole dried milk, 50g dry dates, coconut slices, coconut crushed, drizzle milk and steam again for 5 minutes.

  • Yogurt ½ Cup
  • Tandoori masala 2 ½ tbsp
  • Soy sauce 1 tbsp
  • Ginger garlic paste 1 ½ tbsp
  • Black pepper crushed ½ tsp
  • Salt ½ tsp
  • Lemon juice 2 tbsp
  • Chicken boneless cubes ½ kg
  • Oil 2-3 tbsp
  • Onion chopped 1
  • Charcoal for smoke
  • Oil 2 tbsp
  • Garlic chopped 1 tbsp
  • Ginger julienne 1 piece
  • Cabbage 2 Cups
  • Carrot julienne 1 Cup
  • Capsicum julienne ½ Cup
  • Soy sauce 2 tbsp
  • Salt ½ tsp
  • Red chili crushed 1 tsp
  • Spring onion ½ Cup
  • Mayonnaise 3/4 Cup
  • Tomato ketchup 4-5 tbsp
  • Salt 1/4 tsp
  • Hot sauce 1 tbsp
  • Black pepper crushed 1/4 tsp
  • Oil 2 tbsp
  • Garlic chopped ½ tbsp
  • Red chili crushed ½ tbsp
  • Rice ½ kg boiled

Method:
In bowl, add yogurt, tandoori masala, soy sauce, ginger garlic paste, black pepper crushed, salt, and lemon juice, mix well. Add chicken and marinate for 15 minutes. Heat oil, add onion and fry until light golden. Add marinated chicken and cook. Give a charcoal smoke for 2 minutes. In another wok, add oil, garlic and ginger and sauté. Add cabbage, carrots, capsicum, soy sauce, salt, red chili crushed and stir fry for 2 minutes. Lastly add spring onion & set aside. In bowl, add mayonnaise, tomato ketchup, salt, hot sauce, black pepper crushed, mix & set aside. In saucepan, add oil, garlic and red chili crushed, mix well and sauté & set aside. In serving dish, add boiled rice, red chili+garlic tadka, cooked vegetables, cooked tandoori chicken and drizzle prepared sauce & serve.
