Ingredients

  • Flour 1- ½ cup
  • Caster Sugar 1- ½ cup
  • Cocoa Powder ¾ cup
  • Salt ¾ tsp
  • Baking Powder 1½ tsp
  • Baking Soda ¾ tsp
  • Eggs2
  • Oil ¼ cup
  • Sour Cream V ¾ cup
  • Vanilla Essence1 tsp
  • Boiling Water ¾ cup

 

Ingredients For Frosting

  • Chocolate (chopped) 8 ounce
  • Unsalted Butter 2 cup
  • Icing Sugar 1- ¼ cup
  • Cocoa Powder ¾ cup
  • Salt 1 pinch
  • Light Corn Syrup ¾ cup
  • Vanilla Essence 1tsp

Method 
Combine the flour, sugar, cocoa powder, salt, baking powder and baking soda. Add in the eggs, oil, sour cream and vanilla essence and mix on low speed until combined. Gradually pour in the hot water. Mix well and pour the batter evenly into cupcake cases lined tins (they should be about halfway full). Bake at 180 degrees C for 18-20 minutes, until a toothpick inserted into the center of a cupcake comes out clean. Cool the cupcakes in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
FOR THE FROSTING, beat the butter, sugar, cocoa powder add salt, corn syrup and vanilla essence and beat until just combined, then add the melted chocolate and mix until smooth. Do not overmix. The frosting can be used immediately or held at room temperature for up to 3 hours. When the cupcakes are completely cool, use a small offset spatula or butter knife to swirl the frosting lavishly over top. The cupcakes are best enjoyed fresh on the day they are made.

  • Oil 1tbsp
  • Onions (sliced) 2
  • Spring Onion (sliced) 1
  • Ginger (finely chopped) 1tbsp
  • Thai Green Curry Paste 2 tbsp
  • Chicken Stock 4 cups
  • Coconut Milk 1can
  • Fish Sauce 2 tbsp
  • Dark Brown Sugar 4 tsp
  • Lemon Juice 2 tbsp
  • Turmeric ½ tsp

 

Ingredients For Serving 

  • Rice Noodles 4 ounce
  • Cooked Chicken (shredded) 2 cups
  • Coriander (chopped) Handful
  • Spring Onions (sliced) 3
  • Sriracha Sauce as required
  • Lemon Wedges as required

Method
Heat the oil. Add the onions, spring onions and ginger and cook, until softened. Add the curry paste and cook. Add the chicken stock, coconut milk, fish sauce, brown sugar, lemon juice and turmeric, bring to a gentle simmer. Divide the noodles and chicken into serving bowls. Ladle the soup over top and sprinkle with coriander and spring onion. Serve with Sriracha sauce and lemon wedges.
