Ingredients

  •  1 banana
  •  75g milk chocolate, chopped
  •  4 slices crusty bread
  •  3 eggs
  •  1 tbsp cream
  •  1 tbsp maple syrup
  •  1 tsp vanilla essence
  •  25g unsalted butter
  •  ground cinnamon, to serve
  •  icing sugar or maple syrup, to serve

Slice the banana into a small bowl and mash using a fork. Add the chopped chocolate and mix to combine. Lay 2 slices of bread on the work surface. Divide the chocolate and banana mixture between them, spreading it almost to the edges. Top each with a second slice of bread and press together to make a sandwich. In a shallow dish, whisk together the eggs, cream, maple syrup and vanilla essence. Melt the butter in a frying pan. Lay one sandwich into the egg mixture to coat one side, then carefully flip it over so that both sides of the sandwich are soaked in the egg. Lower the sandwich into the hot frying pan and cook for about 1 min on each side, until golden brown and the chocolate has started to melt. Repeat with the second sandwich. Cut the sandwiches in half to serve and sprinkle with a little ground cinnamon and either icing sugar or maple syrup.

Ingredients :

  •  2 tablespoons ghee
  • 4 cups carrots, peeled & shredded
  •  1 ½ cups milk
  •  ½ teaspoon cardamom powder
  •  5 tablespoons sugar
  •  ½ cup cashews unsalted, chopped
  • Garnish :
  •  1 tablespoon pistachios, chopped
  • 2 tbsp almonds sliced
  • 2 tbsp raisins

Heat 1 tablespoon ghee. Add the carrots and saute for about 8 minutes until the color of the carrots changes. Keep stirring to avoid burning. Add milk to the carrots. Cook the carrots and milk down for 6-7 minutes until all the milk is absorbed by the carrots. Keep stirring to avoid sticking and burning. Add the sugar. Immediately add 1 tablespoon of ghee. Keep stirring. until all the water is absorbed which is left behind by the sugar. Add cardamom powder. Add chopped cashews. Garnish with almonds, pistachios and raisins.

  • 1 kg prawns
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 2 tablespoons mustard oil
  • 1 tablespoon lemon juice
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon turmeric
  • 1 teaspoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 15-20 finely chopped curry leaves
  • 5 chopped green chillies
  • 1 tablespoon crushed dry fenugreek leaves
  • 1 tsp salt
  • 1 tablespoon oil
  • 1 sliced onion
  • few green chillies
  • few curry leaves
  • 2 tomatoes, chopped.
  • 2 tbsp chopped coriander

Mix prawns with a teaspoon of turmeric, 1 teaspoon salt. Set aside and then wash well under running water (this will help with reducing the smell). Keep them aside. Mix mustard oil with lemon juice, ginger garlic paste, turmeric, red chilli powder, coriander powder, cumin powder, chopped curry leaves, chopped green chillies, crushed dry fenugreek leaves and salt. Add in the cleaned prawns to the marinade and set aside for 30 minutes. In hot oil shallow fry marinated shrimp for few minutes or until almost cooked. Keep it aside. In the same pan, add oil, sliced onion, few green chillies, few curry leaves and then tomatoes. Cook until tomatoes are a little mushy. Add cooked prawns and toss them for few minutes. Garnish with chopped coriander.
