Ingredients:

  • Chicken wings ½ kg
  • Turmeric powder ½ tsp
  • Curd 3 tbsp
  • Red chilli powder 1 tsp
  • Ginger garlic paste 1 tsp
  • Black pepper ½ tsp
  • Chicken stock cube 1
  • Ingredients For The Coating:
  • Crushed spicy potato chips 1 cup
  • Oil to fry
  • Lemon Juice of 1 lemon

 

Method
Marinate the chicken wings with all the ingredients. Mix well and keep it in the refrigerator for 30 minutes. Dry roast the spicy potato chips till slightly brown. Crush the chips to powder. Now take the marinated chicken wings and coat each piece with the crushed chips. Heat oil in a wok and fry the coated chicken wings till crisp. Top the fried chicken wings with lemon juice and serve hot.

Ingredients

  • Butter 1 tbsp
  • Dates 10
  • Eggs 5
  • Salt 1/4 tsp
  • Crumbled feta 3 tbsp
  • Chopped spring onion 1
  • Cinnamon a pinch of

Method
Melt the butter, add the dates cut side down. Let them cook for about 2 minutes without flipping them, until they caramelize and soften. Remove the dates from the pan, leaving the butter behind. Add the eggs to the hot butter and scramble them for only about 1 minute. Add salt, turn off the heat and place the dates on top of the eggs in a pretty pattern cut-side down. Gently press the dates into the eggs so that they stay in place. Move the pan to a grill or the broiler. Cook, checking every minute, it takes 3 minutes to cook through, but it varies from oven to oven. Garnish with feta, spring onion and cinnamon and serve.

  • Chickpeas boiled 1 -1/4 cups
  • Garlic (roasted) 8
  • Olive oil 1/2 tsp
  • Garlic 1 clove
  • Tahini 2/3 cup
  • Lemon juice 1/4 cup
  • Salt 1 tsp
  • Water 2 tbsp
  • Ingredients For The Serving:
  • Extra virgin olive oil for serving
  • Paprika for serving
  • Pita bread toasted and cut in wedges for serving
  • Carrots for serving
  • Cucumber sticks for serving

Method
Soak chickpeas overnight with a pinch of soda and wash well next day and boil till soft and reserve the cooking liquid. Drizzle the garlic cloves with olive oil and roast them for 20 to 30 minutes in a hot oven at 180 degrees C until very soft. Once the garlic cloves are cool enough to handle, peel them out of their skins and squeeze them out. Once the chickpeas have cooled, purée them with the minced garlic, roast garlic, tahini, lemon juice, salt and 2 tablespoons or more water from the reserved chickpea liquid, until completely smooth. Add more water until it reaches your desired consistency. Spread the hummus on a plate, make little indentations with the back of a spoon, drizzle with olive oil, and sprinkle with paprika. Serve with pita bread, toasted and cut in wedges, carrots and cucumber sticks.
