  • Ingredients:
  • Parmesan cheese 50 gms
  • Cheddar cheese 100 gms
  • Unsalted butter 50 gms
  • Flour 100 gms
  • Semolina 50 gms
  • Eggs 3
  • Salt Pinch of

Place the butter in a pan with 250ml of cold water. As soon as the mixture comes to a rolling boil, tip in the flour, semolina and a pinch of salt. With a wooden spoon, work quickly and vigorously to beat it all together until smooth and starting to come away from the sides of the pan. Remove from the heat and beat for 30 seconds, then, one at a time, beat in the eggs, followed by the grated cheese. Cover and refrigerate for at least 2 hours. Line a baking sheet with greaseproof paper. With wet hands, divide the mixture into 24 pieces and roll into balls. Cover and return to the fridge overnight. Preheat the oven to 200°C. Bake uncovered for 20 minutes, or until golden.

  • Chicken thighs (cubed) ½ kg
  • Yogurt ¼ cup
  • Ginger garlic paste 1tbsp
  • Kashmiri red chili powder 2 tbsp
  • Cumin powder ½ tsp
  • Turmeric ⅛ tsp
  • Garam masala powder ¼ tsp
  • Black pepper ¼ tsp
  • Salt ½ tsp
  • Curry leaves (chopped) 1
  • Cornflour 2 tbsp
  • Rice Flour 3tbsp
  • Ingredients For Frying
  • Oil for frying
  • Olive Oil 1tbsp
  • Ginger garlic paste 1tbsp
  • Green chillies2
  • Kashmiri red chili powder1tsp
  • Curry leaves1

Ingredients For serving :

  • Lemon wedges as required
  • Onion (sliced) as required

Mix the dahi, ginger garlic paste, chopped curry leaves, kashmiri chili powder, cumin powder, all spice powder, black pepper and salt to a bowl. Transfer the cubed chicken to the bowl and toss with the marinade to fully coat it. Cover the chicken and marinate for a minimum of 30 minutes. Just before frying, add the rice flour and cornflour into the chicken and toss it to coat. Heat oil and deep fry the chicken. Remove the chicken with a slotted spoon and allow it to drain on a paper towel. Slice the green chilis at an angle. Heat the olive oil. Add the green chillies, kashmiri chili powder, ginger garlic paste, and curry leaves. Add it to the fried chicken and toss completely. Serve Chicken 65 with sliced red onions and lemon wedges

Ingredients:

  • Flour 2 cups
  • Baking soda 1/2 tsp
  • Salt 1/2 tsp
  • Unsalted butter (melted) 3/4 cup
  • Brown sugar 1 cup
  • Caster sugar 1/2 cup
  • Vanilla essence 1 tbsp
  • Egg 1
  • Egg yolk 1
  • Chocolate chips 2 cups

Sift together the flour, baking soda and salt. Mix together the melted butter, brown sugar and caster sugar. Beat in the vanilla essence, egg and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips. Drop cookie dough 1/4 cup at a time onto cookie sheets. Keep the cookies about 3 inches apart. Bake at 180 degrees C for 15-17 minutes or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
